Ingredients

For the Chicken

  • 2 lbs boneless skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • Salt and black pepper to taste

For the Green Goddess Marinade

  • 1 cup fresh basil
  • 1 cup parsley
  • ½ cup dill
  • ¼ cup chives or green onions
  • ½ cup Greek yogurt
  • ½ cup mayonnaise
  • 2 tbsp lemon juice
  • 1 garlic clove
  • 2 tsp kosher salt
  • 2 tbsp olive oil

Optional additions:

  • Anchovies or capers for extra savory flavor
  • Avocado for creaminess
  • Jalapeño for heat

Instructions

1. Make the Green Goddess Sauce

Add basil, parsley, dill, chives, yogurt, mayonnaise, lemon juice, garlic, olive oil, and salt into a blender or food processor. Blend until smooth and creamy.

2. Marinate the Chicken

Place chicken in a bowl or zip bag. Pour about ¾ of the sauce over the chicken and coat well. Marinate:

  • Minimum: 30 minutes
  • Best flavor: 2–8 hours

Reserve the remaining sauce for serving.

3. Prepare the Grill

Heat grill to medium-high heat and lightly oil the grates.

4. Grill the Chicken

Cook chicken for about:

  • Thighs: 5–7 minutes per side
  • Breasts: 6–8 minutes per side

Cook until internal temperature reaches 165°F (74°C).

5. Rest and Serve

Let chicken rest for 5 minutes. Drizzle with reserved green goddess sauce and serve with salad, rice, grilled vegetables, or potatoes.
