Ingredients
For the Strawberry Bread

- ½ cup (120ml) vegetable oil

- 1 teaspoon vanilla extract
- 1½ cups (225g) fresh strawberries, diced
- 1 tablespoon all-purpose flour (for coating strawberries)
For the Strawberry Glaze
- 1 cup (120g) powdered sugar
- 2–3 tablespoons strawberry puree
- 1 teaspoon lemon juice

- Fresh strawberry slices
- Freeze-dried strawberry crumbs
- Lemon zest
Instructions
Step 1: Prepare the Pan
- Preheat your oven to 350°F (175°C).
- Grease and line a 9×5-inch loaf pan with parchment paper.
Step 2: Prepare the Strawberries
- Dice the strawberries into small pieces.
- Toss them with 1 tablespoon flour.
- Set aside.
This helps prevent the berries from sinking to the bottom of the loaf.
Step 3: Mix the Dry Ingredients
In a medium bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
Set aside.
Step 4: Mix the Wet Ingredients
- In a large bowl, whisk together the sugar, eggs, oil, sour cream, and vanilla extract until smooth.
Step 5: Make the Batter
- Gradually add the dry ingredients to the wet ingredients.
- Mix until just combined.
- Gently fold in the strawberries.
Do not overmix the batter.
Step 6: Bake
- Pour the batter into the prepared loaf pan.
- Smooth the top with a spatula.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- If the top browns too quickly, loosely tent with foil during the last 15 minutes.
Step 7: Cool
- Allow the bread to cool in the pan for 10 minutes.
- Transfer to a wire rack to cool completely.
Step 8: Make the Strawberry Glaze
- Blend a few strawberries into a smooth puree.
- In a small bowl, whisk together the powdered sugar, strawberry puree, and lemon juice.
- Adjust the consistency by adding more powdered sugar or puree as needed.
The glaze should be thick but pourable.
Step 9: Glaze the Bread
- Drizzle the glaze over the cooled loaf.
- Let it set for 10–15 minutes before slicing.
