Ingredients (2 servings)

  • 1 cup ice
  • 120 ml prosecco or sparkling wine
  • 60 ml elderflower liqueur (such as St-Germain)
  • 30 ml soda water
  • Juice of ½ lime
  • 6–8 fresh mint leaves
  • 1–2 tsp simple syrup or honey (optional, for sweetness)
  • Lime slices and mint sprigs for garnish

Instructions

  1. Add the ice, elderflower liqueur, lime juice, mint leaves, and optional sweetener to a blender.
  2. Blend until the ice becomes smooth and slushy.
  3. Pour in the prosecco and pulse briefly — don’t overblend or the bubbles will disappear.
  4. Add a splash of soda water for extra freshness.
  5. Pour into chilled wine glasses.
  6. Garnish with mint sprigs and lime slices.

Tips

  • Freeze your glasses for 10 minutes before serving for a longer-lasting frozen texture.
  • For a stronger mint flavor, lightly clap the mint leaves before blending.
  • Want it fruitier? Add frozen green grapes or cucumber slices.
  • If the mixture is too thin, add more ice; too thick, add a splash of prosecco.
  • To make it alcohol-free, replace prosecco with sparkling lemonade and use elderflower syrup instead of liqueur.
