Step 1: Prepare the Corn

Brush each ear lightly with olive oil or melted butter.
Season with salt and black pepper.
Step 2: Grill the Corn
Preheat a grill to medium-high heat (400–450°F / 200–230°C).
Place the corn directly on the grill.
Cook for 10–15 minutes, turning every few minutes.
The corn is ready when:
- The kernels are tender
- The outside has golden-brown char marks
- The corn smells smoky and roasted
The charred areas add the classic street-style flavor.

While the corn cooks, prepare the creamy topping.
In a bowl, combine:
- Mayonnaise
- Mexican crema or sour cream
- Garlic
- Lime juice
- Lime zest
- Chili powder
- Smoked paprika
- Cumin
- Cayenne pepper
- Cilantro
- Half of the cotija cheese
Mix until smooth and creamy.
Taste and adjust:
- Add more lime for brightness
- Add more chili powder for spice
- Add salt if needed
Step 4: Coat the Corn
Place the grilled corn on a serving platter.
Using a spoon or brush, generously coat each ear of corn with the creamy sauce.
Make sure all sides are covered.
Step 5: Add Toppings
Sprinkle generously with:
- Remaining cotija cheese
- Chili powder
- Tajín seasoning
- Fresh cilantro
Serve with lime wedges.

Chef’s Tips
- Use fresh summer corn for the sweetest flavor.
- Do not skip the charring—it creates the signature smoky taste.
- Mexican crema gives the most authentic flavor, but sour cream works well.
- Cotija cheese adds a salty, crumbly finish; feta is a good substitute.
- Add lime juice just before serving for the freshest flavor.
- For easier eating, use wooden skewers inserted into the ends of the corn.
- Make extra sauce—it is delicious on tacos, grilled vegetables, and salads.
