Ingredients

For the Wraps

  • 4 large whole-wheat tortillas or wraps
  • 1 cup liquid egg whites (or whites from 8 large eggs)
  • 2 cups fresh spinach, chopped
  • ½ cup crumbled feta cheese
  • Cooking spray or 1 tsp olive oil

For the Sun-Dried Tomato Spread

  • ¼ cup light cream cheese, softened
  • 2 tbsp sun-dried tomatoes, finely chopped
  • 1 garlic clove, minced
  • ¼ tsp dried oregano
  • Pinch of black pepper

Instructions

1. Make the Spread

  • In a small bowl, combine the cream cheese, sun-dried tomatoes, garlic, oregano, and black pepper.
  • Mix until smooth and set aside.

2. Cook the Spinach

  • Heat a nonstick skillet over medium heat.
  • Add the spinach and cook for 1–2 minutes until wilted.
  • Transfer to a plate and let excess moisture drain.

3. Cook the Egg Whites

  • Lightly coat the skillet with cooking spray.
  • Pour in the egg whites and cook gently, stirring occasionally, until just set.
  • Season lightly with salt and pepper if desired.

4. Assemble the Wraps

  • Spread about 1 tablespoon of the sun-dried tomato mixture onto each tortilla.
  • Divide the spinach evenly among the wraps.
  • Add the egg whites and sprinkle with feta cheese.

5. Roll the Wraps

  • Fold in the sides and roll tightly into burrito-style wraps.

6. Toast

  • Place the wraps seam-side down in a skillet over medium heat.
  • Cook for 2–3 minutes per side until golden brown and crisp.
  • Alternatively, toast in an air fryer at 375°F (190°C) for 4–5 minutes.

7. Serve

  • Serve warm and enjoy immediately.

Tips

  • Squeeze excess moisture from the spinach to prevent soggy wraps.
  • Use lavash bread for a texture closer to some popular copycat versions.
  • Make a batch ahead and freeze individually wrapped portions for quick breakfasts. Community meal-prep versions report excellent freezer results.
  • Add roasted red peppers for extra flavor and color.
  • For a higher-protein version, increase the egg whites or add a little low-fat mozzarella.

Storage

  • Refrigerate for up to 4 days in an airtight container.
  • Freeze for up to 3 months.
  • Reheat in an air fryer, oven, or skillet for the crispiest texture.
