Ingredients

For the Chocolate Cookie Dough

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2¼ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt

For the Chocolate Pie Filling

  • 1 cup semi-sweet chocolate chips
  • ¼ cup heavy cream
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

Optional Toppings

  • Powdered sugar
  • Flaky sea salt
  • Chocolate drizzle
  • Mini chocolate chips
  • Chocolate shavings
  • Crushed chocolate cookies
  • Sprinkles

Instructions

Step 1: Prepare the Chocolate Filling

Place the chocolate chips, heavy cream, and butter in a microwave-safe bowl.

Heat in 20-second intervals, stirring after each, until smooth and glossy.

Stir in the vanilla extract and a pinch of salt.

Refrigerate the filling for 20–30 minutes, or until thick enough to scoop.

Step 2: Make the Cookie Dough

In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.

Add the eggs one at a time, mixing well after each addition.

Mix in the vanilla extract.

Step 3: Combine the Dry Ingredients

In a separate bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing just until a soft dough forms.

Do not overmix.

Step 4: Fill the Cookies

Preheat your oven to 350°F (175°C).

Line two baking sheets with parchment paper.

Scoop about 2 tablespoons of cookie dough and flatten it slightly in your hand.

Place a small teaspoon of the chilled chocolate filling in the center.

Cover with another small piece of dough and carefully seal the edges, rolling gently into a ball.

Arrange the cookies on the prepared baking sheets, leaving about 2 inches between each.

Step 5: Bake

Bake for 10–12 minutes, or until the edges are set while the centers remain soft.

Do not overbake, as the cookies will continue to firm up while cooling.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack.

Step 6: Decorate and Serve

Once cooled slightly, dust the cookies with powdered sugar or drizzle with melted chocolate.

Sprinkle with flaky sea salt, chocolate shavings, or crushed chocolate cookies if desired.

Serve warm for a gooey center or allow them to cool completely for a firmer chocolate filling.

Tips for the Best Chocolate Pie Cookies

  • Chill the filling before assembling to make it easier to handle.
  • Use good-quality chocolate for the richest flavor.
  • Don’t overfill the cookies to prevent the filling from leaking during baking.
  • Seal the edges well to keep the chocolate center enclosed.
  • Slightly underbake the cookies for a soft, fudgy texture.
  • Let the cookies cool for a few minutes before serving, as the filling will be very hot.
