Ingredients

  • 250 g pasta (spaghetti, penne, or linguine)
  • 2 cups cherry tomatoes
  • 3–4 garlic cloves, minced
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon chili flakes (optional)
  • ¼ cup fresh basil leaves
  • ¼ cup grated Parmesan cheese

Instructions

  1. Cook the pasta
    Bring salted water to a boil and cook pasta according to package instructions until al dente. Reserve ½ cup pasta water before draining.
  2. Cook the tomatoes
    Heat olive oil in a large pan over medium heat. Add garlic and cook for about 30 seconds until fragrant.
  3. Burst the tomatoes
    Add cherry tomatoes, salt, pepper, and chili flakes. Cook for 8–10 minutes, stirring occasionally, until the tomatoes soften and burst.
  4. Combine with pasta
    Add the cooked pasta to the pan and toss well. Add a splash of reserved pasta water if needed to loosen the sauce.
  5. Finish the dish
    Stir in fresh basil and Parmesan cheese.
  6. Serve hot
    Garnish with extra basil, cheese, or black pepper if desired.
