Ingredients (Serves 10–12)
For the Cheesecake Layer
- 16 oz (450 g) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups heavy whipping cream, cold
For the Layers
- 2 sleeves graham crackers (about 18–20 crackers)
- 1 can (21 oz / 595 g) cherry pie filling
Optional Garnishes
- Fresh cherries
- Whipped cream
- Graham cracker crumbs
- White chocolate shavings
Instructions
- In a large mixing bowl, beat the cream cheese until smooth and creamy.
- Add the powdered sugar and vanilla extract, then mix until fully combined.
- In a separate bowl, whip the heavy cream to stiff peaks.
- Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
- Spread a thin layer of the cheesecake mixture on the bottom of a 9×13-inch dish.
- Arrange a layer of graham crackers over the cheesecake mixture.
- Spread one-third of the cheesecake filling over the crackers.
- Add another layer of graham crackers and repeat the process until you have three layers of filling.
- Finish by spreading the cherry pie filling evenly over the top.
- Cover and refrigerate for at least 6 hours, preferably overnight, to allow the crackers to soften.
- Slice and serve chilled.
Tips
- Chill overnight for the best texture and flavor.
- Use full-fat cream cheese for the creamiest filling.
- Ensure the cream cheese is softened to avoid lumps.
- For cleaner slices, chill the cake thoroughly and use a sharp knife wiped clean between cuts.
- Add a splash of lemon juice to the cheesecake filling for a tangy flavor boost.
- Keep the heavy cream very cold before whipping for maximum volume.
Why It’s Called an Icebox Cake
Before modern refrigerators, desserts like this were chilled in an “icebox,” an insulated cabinet cooled with blocks of ice. The name remains popular for no-bake layered desserts that set in the refrigerator.
Flavor Variations
- Strawberry Cheesecake Icebox Cake: Replace cherry filling with strawberry pie filling.
- Blueberry Cheesecake Icebox Cake: Use blueberry pie filling and add fresh blueberries.
- Mixed Berry Version: Combine strawberries, raspberries, and blueberries.
- Chocolate Cherry Cheesecake: Add chocolate graham crackers and chocolate shavings.
- Lemon Cheesecake Icebox Cake: Add lemon zest and top with lemon curd.
Storage
- Refrigerator: Store covered for up to 4 days.
- Freezer: Freeze for up to 1 month. Thaw overnight in the refrigerator before serving.
- The texture becomes softer over time as the graham crackers absorb moisture from the filling.
