Instructions

Step 1: Prepare the Oven

Preheat your oven to 350°F (175°C).

Grease a 12-cup muffin pan with cooking spray or line with paper liners.


Step 2: Mix the Dry Ingredients

In a large bowl, combine:

  • Baking powder
  • Cinnamon

  • Raisins
  • Coconut (if using)

Stir until every oat is coated.

Allow the mixture to sit for 5–10 minutes so the oats absorb some liquid.


Step 5: Fill the Muffin Pan

Divide the mixture evenly among the muffin cups.

Fill each cup nearly to the top and gently press the oats down with the back of a spoon.

Sprinkle extra walnuts or oats on top if desired.


Step 6: Bake

Bake for 25–30 minutes, or until:

  • The tops are lightly golden
  • The centers are set
  • A toothpick inserted comes out mostly clean

Step 7: Cool

Allow the oatmeal cups to cool in the pan for 10 minutes.

Carefully remove them and transfer to a wire rack.

Whisk together:

  • Greek yogurt
  • Maple syrup
  • Vanilla
  • Milk

Add enough milk until smooth and pourable.
