For the French Toast

Instructions

Step 1: Prepare the Custard

In a large shallow bowl, whisk together the eggs, whole milk, heavy cream, sugar, vanilla extract, cinnamon, nutmeg, and salt until smooth and fully combined.


Step 2: Soak the Bread

Dip each slice of brioche bread into the custard mixture, allowing it to soak for about 20–30 seconds per side. The bread should absorb the custard without becoming overly soggy.

Let any excess custard drip back into the bowl before transferring the bread to a plate.


Step 3: Heat the Pan

Place a large nonstick skillet or griddle over medium heat.

Add 1 tablespoon of butter and allow it to melt, coating the surface evenly.


Step 4: Cook the French Toast

Place the soaked brioche slices onto the hot skillet without overcrowding.

Cook for 3–4 minutes per side, or until each slice is deep golden brown with a lightly crisp exterior and a soft, custardy center.

Add more butter as needed for additional batches.


Step 5: Keep Warm

Transfer the cooked French toast to a baking sheet and keep warm in a 200°F (95°C) oven while cooking the remaining slices.


Step 6: Serve

Arrange the French toast on serving plates.

Dust with powdered sugar and top with fresh berries, sliced bananas, whipped cream, toasted nuts, or a drizzle of warm maple syrup.

Serve immediately while warm.


Tips for the Best Brioche French Toast

  • Use day-old brioche bread for the best texture, as it absorbs the custard without falling apart.
  • Cook over medium heat to ensure the inside cooks through while the outside turns golden.
  • Don’t oversoak the bread, especially if it’s very soft.
