Ingredients

For the Burgers

  • 2 cans (15 oz each) black beans, drained and rinsed
  • ½ cup breadcrumbs
  • 1 small onion, finely diced
  • 1 bell pepper, finely diced
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil (for cooking)

Optional Toppings

  • Lettuce
  • Tomato slices
  • Red onion slices
  • Avocado
  • Pickles
  • Cheese or vegan cheese
  • Burger buns

Instructions

1. Prepare the Beans

  • Place the black beans in a large bowl.
  • Mash them with a fork or potato masher, leaving some beans partially intact for texture.

2. Mix the Ingredients

  • Add the onion, bell pepper, garlic, breadcrumbs, egg, tomato paste, cumin, smoked paprika, chili powder, salt, and pepper.
  • Mix until well combined.

3. Form the Patties

  • Divide the mixture into 4–6 equal portions.
  • Shape each portion into a burger patty.
  • Refrigerate for 20–30 minutes to help them hold together.

4. Cook the Burgers

  • Heat olive oil in a skillet over medium heat.
  • Cook the patties for 4–5 minutes per side, or until golden brown and heated through.

5. Assemble

  • Place each patty on a toasted burger bun.
  • Add your favorite toppings and serve immediately.

Tips

  • If the mixture feels too wet, add more breadcrumbs a tablespoon at a time.
  • For extra flavor, sauté the onion and bell pepper before mixing them into the beans.
  • To make them vegan, replace the egg with a flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water).
  • Bake at 375°F (190°C) for 20–25 minutes, flipping halfway through, for a lighter option.
  • Freeze uncooked patties between sheets of parchment paper for up to 3 months.
