Ingredients
For the sandwich
- 2 bagels, sliced and toasted
- 4 large eggs
- 4 slices bacon or 2 sausage patties
- 2 slices cheddar, provolone, or pepper jack cheese
- 1 tablespoon butter
For the bee sting sauce
- 3 tablespoons honey
- 1–2 teaspoons hot sauce or chili flakes
- 1 teaspoon olive oil
Optional toppings
- Arugula or spinach
- Sliced avocado
- Pickled onions
- Everything bagel seasoning
Instructions
1. Make the bee sting sauce
In a small bowl, mix honey, hot sauce or chili flakes, and olive oil. Set aside.
2. Cook the meat
Cook bacon or sausage in a skillet over medium heat until crispy and fully cooked. Transfer to a paper towel-lined plate.
3. Cook the eggs
Melt butter in the same skillet. Fry or scramble the eggs to your preference. Season lightly with salt and pepper.
4. Melt the cheese
Place cheese slices over the hot eggs during the last minute of cooking so they melt slightly.
5. Toast the bagels
Toast the bagels until golden and crisp.
6. Assemble the sandwich
Layer eggs, cheese, and bacon or sausage onto the toasted bagels. Add optional toppings if desired.
7. Finish with bee sting sauce
Drizzle the spicy honey sauce generously over the sandwich and serve immediately.
Tips
- Pepper jack cheese adds extra heat and pairs well with hot honey.
- Use thick-cut bacon for more crunch and flavor.
- Don’t overcook the eggs; soft eggs balance the crispy bagel nicely.
- Add arugula for freshness and a peppery bite.
- Warm the honey slightly before mixing for easier drizzling.
- For a café-style finish, brush the toasted bagels lightly with butter before assembling.
