Ingredients
For the Banana Bread
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg (optional)
- ½ cup (113g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- ¼ cup (50g) light brown sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1½ cups mashed ripe bananas (about 3–4 large bananas)
- ¼ cup (60g) sour cream or plain Greek yogurt
- 2 tablespoons whole milk (if needed)
Optional Mix-Ins
- 1 cup semi-sweet chocolate chips
- ¾ cup chopped walnuts
- ¾ cup chopped pecans
- ½ cup raisins or dried cranberries
- 2 tablespoons ground flaxseed
- ½ cup shredded coconut
Optional Topping
- 1 banana, sliced lengthwise
- 2 tablespoons coarse sugar
- Chopped walnuts or pecans
Instructions
Step 1: Prepare the Oven
Preheat your oven to 350°F (175°C).
Grease and line a 9×5-inch loaf pan with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together:
- All-purpose flour
- Baking soda
- Baking powder
- Salt
- Cinnamon
- Nutmeg (if using)
Set aside.
Step 3: Cream the Butter and Sugar
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3–4 minutes.
Add the eggs one at a time, mixing well after each addition.
Stir in the vanilla extract.
Step 4: Add the Bananas
Mix the mashed bananas into the butter mixture until well combined.
Stir in the sour cream.
If the batter appears too thick, add the milk.
Step 5: Combine the Batter
Gradually add the dry ingredients to the wet ingredients.
Gently fold everything together with a spatula until just combined.
Do not overmix, as this can make the bread dense.
Fold in any optional mix-ins, such as chocolate chips or chopped nuts.
Step 6: Fill the Pan
Pour the batter into the prepared loaf pan and smooth the top.
If desired, place a banana sliced lengthwise on top and sprinkle with coarse sugar or chopped nuts for a bakery-style finish.
Step 7: Bake
Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
If the top begins browning too quickly, loosely cover the loaf with aluminum foil during the last 15 minutes of baking.
Step 8: Cool
Allow the banana bread to cool in the pan for 10–15 minutes.
Lift it out using the parchment paper and transfer it to a wire rack to cool completely before slicing.
Optional Variations
Chocolate Chip Banana Bread
Fold 1 cup of semi-sweet or dark chocolate chips into the batter for a rich chocolate twist.
Walnut Banana Bread
Add chopped toasted walnuts for a crunchy, nutty flavor.

Layer cinnamon sugar through the batter and swirl it with a knife before baking.
Peanut Butter Banana Bread
Swirl creamy peanut butter into the batter before baking for a delicious flavor combination.

Tips for the Best Banana Bread
- Use very ripe bananas with brown spots for the sweetest flavor.
- Measure the flour using the spoon-and-level method to avoid a dry loaf.
- Do not overmix the batter, as this can result in dense bread.
- Allow the loaf to cool before slicing so it holds together properly.
- Add a sprinkle of coarse sugar on top for a crisp, bakery-style crust.
- Toast nuts before adding them for enhanced flavor.
- Banana bread tastes even better the next day as the flavors continue to develop.
