Ingredients

For the Banana Bread

  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

  • ¾ cup chopped pecans
  • ½ cup raisins or dried cranberries
  • 2 tablespoons ground flaxseed
  • ½ cup shredded coconut

  • 1 banana, sliced lengthwise
  • 2 tablespoons coarse sugar
  • Chopped walnuts or pecans

Instructions

Step 1: Prepare the Oven

Preheat your oven to 350°F (175°C).

Grease and line a 9×5-inch loaf pan with parchment paper, leaving an overhang on the sides for easy removal.


Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together:

  • All-purpose flour
  • Baking soda
  • Baking powder
  • Salt
  • Cinnamon
  • Nutmeg (if using)

Set aside.


Step 3: Cream the Butter and Sugar

In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3–4 minutes.

Add the eggs one at a time, mixing well after each addition.

Stir in the vanilla extract.


Step 4: Add the Bananas

Mix the mashed bananas into the butter mixture until well combined.

Stir in the sour cream.

If the batter appears too thick, add the milk.


Step 5: Combine the Batter

Gradually add the dry ingredients to the wet ingredients.

Gently fold everything together with a spatula until just combined.

Do not overmix, as this can make the bread dense.

Fold in any optional mix-ins, such as chocolate chips or chopped nuts.


Step 6: Fill the Pan

Pour the batter into the prepared loaf pan and smooth the top.

If desired, place a banana sliced lengthwise on top and sprinkle with coarse sugar or chopped nuts for a bakery-style finish.


Step 7: Bake

Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.

If the top begins browning too quickly, loosely cover the loaf with aluminum foil during the last 15 minutes of baking.


Step 8: Cool

Allow the banana bread to cool in the pan for 10–15 minutes.

Lift it out using the parchment paper and transfer it to a wire rack to cool completely before slicing.
