  • ¾ cup reduced apple cider
  • 1½ cups peeled and finely diced apples

For the Apple Cider Glaze

  • 1 cup powdered sugar
  • 2–3 tablespoons reduced apple cider
  • ½ teaspoon vanilla extract

Instructions

Step 1: Reduce the Apple Cider

Pour 2 cups of apple cider into a small saucepan.

Bring to a gentle boil over medium heat, then reduce to a simmer.

Cook for 15–20 minutes, or until the cider reduces to about ¾ cup.

This concentrated cider provides a deeper apple flavor throughout the cake.

Allow it to cool completely before using.


Step 2: Prepare the Oven and Pan

Preheat your oven to 350°F (175°C).

Grease a 9-inch square baking pan or a 9-inch springform pan.

Line the bottom with parchment paper if desired.


Step 3: Make the Streusel

In a medium bowl, combine:

Spread half of the batter into the prepared pan.

Sprinkle half of the streusel mixture evenly over the batter.

Add the remaining batter and smooth the top.

Finish with the remaining streusel.

Step 10: Bake

Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.

The top should be golden brown and fragrant.

If the cake begins browning too quickly, loosely cover with foil during the final 10 minutes.

Transfer to a wire rack if desired.

In a small bowl, whisk together:

  • Powdered sugar
  • Reduced apple cider
  • Vanilla extract
