Ingredients

For the Strawberry Layer

  • 1 lb (450 g) fresh strawberries, hulled and sliced
  • ¼ cup granulated sugar
  • 2 tbsp lemon juice
  • ¼ cup water

For the Cream Filling

  • 8 oz (225 g) mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract

For Assembly

  • 24–30 ladyfinger cookies (savoiardi)
  • Extra sliced strawberries for layering and garnish

Instructions

1. Prepare the Strawberry Mixture

  1. In a saucepan, combine half of the strawberries, granulated sugar, lemon juice, and water.
  2. Cook over medium heat for 5–7 minutes until the berries soften.
  3. Blend or mash until smooth.
  4. Allow the mixture to cool completely.
  5. Stir in the remaining fresh sliced strawberries.

2. Make the Cream Filling

  1. In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  2. In a separate bowl, whisk the mascarpone until smooth.
  3. Gently fold the whipped cream into the mascarpone until fully combined.

3. Assemble the Tiramisu

  1. Quickly dip each ladyfinger into the cooled strawberry mixture.
  2. Arrange a layer of dipped ladyfingers in the bottom of an 8-inch square dish.
  3. Spread half of the mascarpone cream mixture over the ladyfingers.
  4. Add a layer of sliced strawberries.
  5. Repeat with another layer of dipped ladyfingers, cream, and strawberries.

4. Chill

  1. Cover and refrigerate for at least 4 hours, preferably overnight.
  2. This allows the layers to soften and the flavors to meld together.

5. Garnish and Serve

  1. Top with additional strawberries before serving.
  2. Slice and serve chilled.

Tips

  • Use ripe, sweet strawberries for the best flavor.
  • Do not soak the ladyfingers for too long; a quick dip prevents sogginess.
  • Chill overnight for the most flavorful and stable texture.
  • Add a splash of strawberry liqueur to the strawberry mixture for an adult version.
  • For extra elegance, garnish with white chocolate shavings or fresh mint leaves.
  • Store covered in the refrigerator for up to 3 days.
