Ingredients

For the Dough

  • 500g bread flour
  • 100g active sourdough starter
  • 350g lukewarm water
  • 10g salt

For the Filling

  • 100g white chocolate, chopped into small pieces
  • 2 tbsp dried edible rose petals
  • 2 tsp ground cinnamon
  • 1 tbsp sugar (optional, for extra sweetness)

Instructions

Step 1: Mix the Dough

In a large bowl, combine the bread flour, water, and sourdough starter until no dry flour remains. Cover and let it rest for 30–45 minutes (autolyse).

Step 2: Add Salt

Sprinkle the salt over the dough and knead until fully incorporated. Cover and let the dough rest for 30 minutes.

Step 3: Stretch and Fold

Over the next 2–3 hours, perform 4 sets of stretch-and-folds every 30 minutes. During the second fold, gently add the white chocolate, rose petals, cinnamon, and sugar (if using), folding carefully to distribute them evenly.

Step 4: Bulk Fermentation

Cover the dough and let it ferment until it has increased by about 50–75% in size, usually 4–6 hours, depending on room temperature.

Step 5: Shape the Dough

Turn the dough onto a lightly floured surface and gently shape it into a round or oval loaf. Place it seam-side up in a floured proofing basket or bowl lined with a clean towel.

Step 6: Final Proof

Cover and refrigerate the dough overnight (8–12 hours) for the best flavor and easier scoring.

Step 7: Bake

  1. Preheat the oven to 475°F (245°C) with a Dutch oven inside for at least 30 minutes.
  2. Carefully transfer the dough onto parchment paper and score the top with a sharp blade.
  3. Place it into the hot Dutch oven, cover, and bake for 20 minutes.
  4. Remove the lid and bake for another 20–25 minutes, or until the crust is deep golden brown.

Step 8: Cool

Transfer the loaf to a wire rack and let it cool completely for at least 1 hour before slicing to allow the crumb to set.

Tips

  • Use food-grade edible rose petals only.
  • Add the white chocolate gently to prevent it from melting into the dough.
  • For a stronger floral flavor, lightly crush the rose petals before mixing them in.
  • Enjoy with butter, honey, cream cheese, or a cup of hot tea for a delicious treat.
