Instructions

Step 1: Prepare the Corn

Remove the husks and corn silk.

Rinse the corn under cold water and pat dry.

Brush each ear lightly with olive oil or melted butter.

Season with salt and black pepper.


Step 2: Grill the Corn

Preheat a grill to medium-high heat (400–450°F / 200–230°C).

Place the corn directly on the grill.

Cook for 10–15 minutes, turning every few minutes.

Using a spoon or brush, generously coat each ear of corn with the creamy sauce.

Make sure all sides are covered.


Step 5: Add Toppings

Sprinkle generously with:

  • Remaining cotija cheese
  • Chili powder
  • Tajín seasoning
  • Fresh cilantro

Serve with lime wedges.


Oven-Roasted Elote Method

If you do not have a grill:

  1. Preheat oven to 425°F (220°C).
  2. Place corn on a baking sheet.
  3. Brush with oil or butter.
  4. Roast for 20–25 minutes, turning halfway.
  5. Broil for 2–3 minutes for extra char.

Air Fryer Elote Method

  1. Preheat air fryer to 390°F (200°C).
  2. Brush corn with oil.
  3. Air fry for 10–12 minutes, turning halfway.
  4. Coat with sauce and toppings before serving.

Elote Bowl (Esquites Style)

For a spoon-friendly version:

  1. Cut grilled corn kernels off the cob.
  2. Mix with the creamy sauce.
  3. Add cotija cheese, lime juice, cilantro, and chili powder.
