Ingredients
- 1½ pounds (680g) fresh strawberries, hulled and sliced
- ½ cup granulated sugar (adjust to taste depending on the sweetness of the berries)
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- Pinch of salt
Optional Ingredients
- ½ teaspoon lemon zest
- ½ teaspoon almond extract
- 1 tablespoon honey for extra sweetness
- Fresh mint leaves for garnish
Equipment
- Medium saucepan
- Wooden spoon or silicone spatula
- Small bowl
- Measuring cups and spoons
- Fine-mesh strainer (optional)
- Glass jar or airtight container for storage
Instructions
Step 1: Prepare the Strawberries
Wash, hull, and slice the strawberries into even pieces.
If using frozen strawberries, there is no need to thaw them before cooking.
Step 2: Cook the Fruit
In a medium saucepan, combine the strawberries, sugar, lemon juice, and a pinch of salt.
Place the saucepan over medium heat and stir gently.
As the berries cook, they will begin releasing their natural juices.
Simmer for about 8–10 minutes, stirring occasionally, until the strawberries soften and begin to break down.
Step 3: Thicken the Sauce
In a small bowl, whisk together the cornstarch and cold water until smooth.
Slowly pour the slurry into the simmering strawberry mixture while stirring constantly.
Continue cooking for another 2–3 minutes, or until the sauce thickens to your desired consistency.
Step 4: Add the Vanilla
Remove the saucepan from the heat.
Stir in the vanilla extract and, if using, the lemon zest or almond extract.
For a smoother sauce, use the back of a spoon to mash some of the strawberries, or blend the sauce with an immersion blender until it reaches your preferred texture.
Step 5: Cool
Allow the strawberry sauce to cool for about 10–15 minutes.
The sauce will continue to thicken slightly as it cools.
Serve warm or refrigerate until chilled.
Step 6: Serve
Spoon the strawberry sauce over your favorite desserts and breakfasts, or use it as a filling for cakes and pastries.
Garnish with fresh strawberries or mint leaves if desired.

Tips for the Best Strawberry Sauce
- Use ripe, sweet strawberries for the richest flavor.
- Adjust the sugar depending on the sweetness of your berries.
- Fresh lemon juice brightens the flavor and balances the sweetness.
- Simmer gently to preserve the fresh strawberry taste.
- Mash only part of the berries if you prefer a chunky sauce.
- Blend the entire mixture for a silky, smooth topping.
- If the sauce becomes too thick after chilling, stir in a tablespoon or two of water until it reaches the desired consistency.
Recipe Variations
Chunky Strawberry Sauce
Leave the berries mostly intact for a rustic sauce with large fruit pieces.
Smooth Strawberry Syrup
Blend and strain the sauce for a silky texture that’s perfect for pancakes and drinks.
Mixed Berry Sauce
Replace part of the strawberries with raspberries, blueberries, or blackberries for added depth of flavor.
Strawberry Orange Sauce
Substitute the lemon juice with fresh orange juice and add orange zest for a citrus twist.
Honey Strawberry Sauce
Replace part of the sugar with honey for a naturally sweet variation.
Spiced Strawberry Sauce
Add a pinch of cinnamon or cardamom for a warm, aromatic flavor that pairs well with fall desserts.
Storage
Allow the strawberry sauce to cool completely before transferring it to a clean, airtight container or glass jar.
Store it in the refrigerator for up to 1 week. Stir well before serving, as the fruit may settle during storage.
For longer storage, freeze the sauce in freezer-safe containers or ice cube trays for up to 3 months. Thaw overnight in the refrigerator and stir before using. If needed, gently reheat the sauce over low heat or in the microwave until warmed through.
