Ingredients

For the Dough

  • 1 cup warm whole milk (110°F/43°C)
  • 2¼ teaspoons active dry yeast (1 packet)
  • ¼ cup granulated sugar
  • 2 large eggs, room temperature
  • ⅓ cup unsalted butter, melted
  • 1 teaspoon salt
  • 4 to 4½ cups all-purpose flour

For the Cinnamon Filling

  • ½ cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 2 tablespoons ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • ¼ teaspoon salt

For the Cream Cheese Frosting

  • 4 ounces cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1½ cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1–2 tablespoons milk, as needed

Instructions

Step 1: Activate the Yeast

In a large mixing bowl, combine the warm milk, yeast, and granulated sugar.

Let the mixture sit for 5–10 minutes until it becomes foamy. This indicates the yeast is active.

Step 2: Make the Dough

Add the eggs, melted butter, and salt to the yeast mixture.

Gradually mix in the flour, one cup at a time, until a soft dough forms.

Turn the dough onto a lightly floured surface and knead for 8–10 minutes, or until it becomes smooth, elastic, and slightly tacky.

If using a stand mixer with a dough hook, knead on medium speed for about 6–8 minutes.

Step 3: First Rise

Place the dough into a lightly greased bowl and turn it once to coat.

Cover with plastic wrap or a clean kitchen towel and let rise in a warm place for about 1 hour, or until doubled in size.

Step 4: Prepare the Filling

In a small bowl, mix together the brown sugar, cinnamon, nutmeg, and salt.

Set aside.

Step 5: Roll Out the Dough

Punch down the risen dough and transfer it to a lightly floured surface.

Roll it into a rectangle measuring approximately 16 x 12 inches.

Spread the softened butter evenly across the dough, leaving a ½-inch border around the edges.

Sprinkle the cinnamon-sugar mixture evenly over the butter.

Step 6: Roll and Slice

Starting with the long edge, tightly roll the dough into a log.

Pinch the seam to seal.

Using a sharp knife or unflavored dental floss, slice the log into 12 equal rolls.

Arrange the rolls in a greased 9×13-inch baking dish, leaving a little space between each one.

Step 7: Second Rise

Cover the baking dish and let the rolls rise for 30–45 minutes, or until puffy and nearly doubled in size.

Meanwhile, preheat the oven to 350°F (175°C).

Step 8: Bake

Bake the cinnamon rolls for 25–30 minutes, or until they are lightly golden brown and fully baked in the center.

Avoid overbaking to keep the rolls soft and tender.

Allow the rolls to cool for about 10 minutes before frosting.

Step 9: Make the Frosting

In a medium bowl, beat together the softened cream cheese and butter until smooth.

Gradually add the powdered sugar and vanilla extract.

Mix until creamy, adding milk one tablespoon at a time until the frosting reaches a smooth, spreadable consistency.

Step 10: Frost and Serve

Spread the cream cheese frosting generously over the warm cinnamon rolls.

The warmth of the rolls will slightly melt the frosting, creating a rich and gooey topping.

Serve warm and enjoy!

Tips for the Best Cinnamon Rolls

  • Use fresh yeast for the best rise.
  • Warm the milk to about 110°F (43°C)—too hot can kill the yeast.
  • Measure the flour carefully to avoid dry dough.
  • Knead until the dough is smooth and elastic.
  • Roll the dough tightly for beautiful swirls.
  • Use room-temperature butter for an even filling.
  • Don’t overbake; the rolls should be lightly golden.
  • Frost while the rolls are still warm for the ultimate gooey finish.

Recipe Notes

  • Bread flour can be substituted for all-purpose flour for an even softer, chewier texture.
  • For overnight cinnamon rolls, assemble the rolls in the baking dish, cover tightly, and refrigerate overnight. Let them sit at room temperature for about 45 minutes before baking.
  • Cream cheese frosting adds a rich, tangy finish, but a simple vanilla glaze also works wonderfully.
  • These cinnamon rolls are perfect for holiday breakfasts, weekend brunches, birthdays, or anytime you want a warm, homemade treat.
  • Serve fresh from the oven for the softest texture and the most delicious gooey cinnamon filling.
