- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons butter
- 1 tablespoon olive oil
- 4 corn tortillas, cut into thin strips
- 1 small onion, diced
- 1 jalapeño, seeded and finely diced
- 1 bell pepper, diced (red or green)
- 1 cup diced tomatoes
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- 1 cup shredded cheddar or Monterey Jack cheese
- 2 tablespoons chopped fresh cilantro
Optional Toppings
- Sliced avocado
- Salsa or pico de gallo
- Sour cream
- Pickled jalapeños
- Crumbled queso fresco
- Hot sauce
- Lime wedges
- Chopped green onions
Instructions
Step 1: Prepare the Eggs
In a large bowl, whisk together the eggs, milk, salt, and black pepper until smooth and slightly frothy. Set aside.
Step 2: Crisp the Tortillas
Heat the olive oil in a large nonstick or cast-iron skillet over medium heat.
Add the tortilla strips and cook for 4–5 minutes, stirring frequently, until they are golden brown and crispy. Transfer them to a plate lined with paper towels.
Step 3: Cook the Vegetables
In the same skillet, melt the butter.
Add the onion, bell pepper, and jalapeño. Cook for about 4 minutes until softened.
Stir in the garlic, diced tomatoes, chili powder, and cumin. Cook for another 2–3 minutes until fragrant and the tomatoes begin to soften.
Step 4: Scramble the Eggs
Reduce the heat to medium-low and pour the egg mixture into the skillet.
Using a silicone spatula, gently stir the eggs as they cook, creating soft, creamy curds.
When the eggs are mostly set but still slightly glossy, fold in the crispy tortilla strips.
Step 5: Add the Cheese
Sprinkle the shredded cheese evenly over the eggs and allow it to melt for 1–2 minutes.
Remove the skillet from the heat before the eggs become overcooked.
Step 6: Garnish and Serve
Sprinkle with chopped cilantro and add your favorite toppings such as avocado, salsa, sour cream, queso fresco, or hot sauce.
Serve immediately with warm flour or corn tortillas, refried beans, breakfast potatoes, or fresh fruit.
Tips for the Best Tex-Mex Migas
- Slightly stale corn tortillas crisp up beautifully and hold their texture.
- Cook the eggs gently over medium-low heat for soft, creamy curds.
- Don’t overcook the eggs—they will continue cooking from the residual heat.
- Add the tortilla strips near the end to keep some of their crunch.
- Freshly grated cheese melts more smoothly than pre-shredded cheese.
- Customize the heat level by adding more or less jalapeño.
- Garnish with fresh cilantro and a squeeze of lime for extra brightness.
- Serve immediately for the best combination of creamy eggs and crispy tortillas.

Storage
Store leftover migas in an airtight container in the refrigerator for up to 3 days.
