Light Wheat Oatmeal Bread Recipe

Ingredients

For the Dough

  • 2 cups (180g) old-fashioned rolled oats
  • 2 cups (480ml) boiling water
  • 2 tablespoons unsalted butter
  • ⅓ cup (100g) honey
  • 2¼ teaspoons (1 packet) active dry yeast
  • ½ cup (120ml) warm water (105–110°F / 40–43°C)
  • 2 cups (250g) whole wheat flour
  • 4 to 4½ cups (500–560g) bread flour
  • 2 teaspoons salt

Optional Topping

  • 2 tablespoons rolled oats
  • 1 tablespoon milk for brushing

Instructions

Step 1: Prepare the Oat Mixture

Place the oats in a large mixing bowl.

Pour the boiling water over the oats and stir in the butter and honey.

Allow the mixture to cool until lukewarm.


Step 2: Activate the Yeast

In a small bowl, combine:

  • Warm water
  • Active dry yeast

Let sit for 5–10 minutes until foamy.


Step 3: Mix the Dough

Add the yeast mixture to the cooled oat mixture.

Stir in:

  • Whole wheat flour
  • Salt

Gradually add the bread flour, one cup at a time, until a soft dough forms.


Step 4: Knead

Turn the dough onto a lightly floured surface.

Knead for 8–10 minutes until smooth and elastic.

Alternatively, knead with a stand mixer fitted with a dough hook for 6–8 minutes.


Step 5: First Rise

Place the dough in a lightly greased bowl.

Cover and let rise in a warm place for 1–1½ hours, or until doubled in size.


Step 6: Shape the Loaves

Punch down the dough.

Divide into two equal portions.

Shape each portion into a loaf and place into two greased 9×5-inch loaf pans.


Step 7: Second Rise

Cover loosely and let rise for 45–60 minutes until the dough crowns about 1 inch above the rim of the pans.

If desired, brush with milk and sprinkle with rolled oats.


Step 8: Bake

Preheat the oven to 375°F (190°C).

Bake for 30–35 minutes, or until the loaves are golden brown and sound hollow when tapped.

The internal temperature should reach 190°F (88°C).


Step 9: Cool

Remove the loaves from the pans immediately.

Cool completely on a wire rack before slicing.


Storage

  • Store at room temperature in an airtight container for up to 4 days.
  • Freeze for up to 3 months.

Tips for Success

  • For a softer loaf, replace ½ cup of bread flour with all-purpose flour.
  • Honey adds natural sweetness, but maple syrup can also be used.
  • Avoid adding too much flour; the dough should remain slightly tacky.
  • Rolled oats provide the best texture, while quick oats can be used in a pinch.
