Ingredients

For the Pickle Bites

  • 12 large dill pickle chips or pickle slices, cut in half if needed
  • 6 ounces (170g) sliced corned beef, chopped into bite-sized pieces
  • 4 ounces (115g) Swiss cheese, cut into small squares
  • ½ cup sauerkraut, drained and squeezed dry
  • ¼ cup Thousand Island dressing
  • 1 tablespoon chopped fresh parsley (optional)

Optional Garnishes

  • Caraway seeds
  • Chopped chives
  • Cracked black pepper

Instructions

Step 1: Prepare the Pickles

Pat the pickle slices dry with paper towels to remove excess moisture. This helps prevent the bites from becoming soggy.

Arrange the pickle slices on a serving platter or baking sheet.

Step 2: Add the Corned Beef

Place a small piece of chopped corned beef on top of each pickle slice.

Fold or stack the meat neatly so it stays in place.

Step 3: Add the Swiss Cheese

Top each bite with a small square of Swiss cheese.

Press gently to help it adhere to the corned beef.

Step 4: Add the Sauerkraut

Place a small amount of drained sauerkraut on top of each cheese-covered bite.

Be sure to squeeze out excess liquid beforehand to keep the appetizers crisp.

Step 5: Warm (Optional)

For a warm version, place the bites on a baking sheet and broil for 2–3 minutes or until the cheese begins to melt.

Watch carefully to prevent burning.

Step 6: Finish with Dressing

Drizzle or pipe a small amount of Thousand Island dressing over each bite.

Sprinkle with parsley, chives, or caraway seeds if desired.

Step 7: Serve

Serve immediately while chilled or warm, depending on your preference.

These bites are best enjoyed fresh.

Tips for the Best Reuben Pickle Bites

Dry the Ingredients Well

Patting the pickles dry and draining the sauerkraut thoroughly helps maintain the perfect texture.

Use Quality Corned Beef

Freshly sliced deli corned beef provides the best flavor and tenderness.

Make Them Bite-Sized

Keep toppings small and balanced so they’re easy to eat in one bite.

Serve Fresh

Assemble shortly before serving to keep the pickles crunchy.

Try Different Pickles

Use spicy dill pickles or garlic pickles for an extra flavor boost.

Variations

Pastrami Pickle Bites

Substitute pastrami for corned beef for a smoky deli-style variation.

Turkey Reuben Bites

Use sliced turkey instead of corned beef for a lighter option.

Spicy Reuben Bites

Add a few drops of hot sauce or sliced jalapeños.
