- 1 cup (200g) brown sugar
- ½ cup (100g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2½ cups (315g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups (340g) semi-sweet chocolate chips
For the Frosting (Optional)
- ½ cup (113g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1–2 tablespoons milk
- 1 teaspoon vanilla extract
- Sprinkles for decoration
Instructions
Step 1: Prepare the Pan
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
Step 2: Make the Cookie Dough
In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until light and creamy. Add the eggs one at a time, then mix in the vanilla extract.
Step 3: Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Step 4: Add Chocolate Chips
Fold in the chocolate chips until evenly distributed throughout the dough.
Step 5: Bake
Press the cookie dough evenly into the prepared cake pan. Bake for 20–25 minutes, or until the edges are golden brown and the center is set.
Step 6: Cool Completely
Allow the cookie cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Step 7: Decorate
For the frosting, beat together the butter, powdered sugar, milk, and vanilla extract until smooth and fluffy. Pipe decorative borders around the cooled cookie cake and add sprinkles if desired.
Step 8: Serve
Slice into wedges and serve. Enjoy with a glass of milk, coffee, or your favorite ice cream.
Tips for the Best Cookie Cake
- Do not overbake; the center should remain slightly soft for the perfect chewy texture.
- Use room-temperature ingredients for a smoother dough.
- Add chopped nuts, white chocolate chips, or candy pieces for extra flavor.
- Chill the dough for 20–30 minutes if your kitchen is warm.
- Store leftovers in an airtight container at room temperature for up to 4 days.
- For an extra-indulgent dessert, serve warm with a scoop of vanilla ice cream.
This homemade Cookie Cake is soft, chewy, loaded with chocolate chips, and easy to customize for any celebration. It’s a fun and delicious alternative to a traditional cake that both kids and adults will love.
