- 1/4 cup pasta water (as needed)

Instructions
- Cook the pasta
Bring a large pot of salted water to a boil. Cook pasta until al dente according to package instructions. Reserve some pasta water before draining. - Prepare the sauce
In a large bowl, mix ricotta, lemon zest, lemon juice, Parmesan, garlic, olive oil, salt, and pepper. - Combine pasta and sauce
Add hot pasta directly to the ricotta mixture. Toss well, adding reserved pasta water a little at a time until the sauce becomes creamy and smooth. - Add extras if desired
Stir in spinach, herbs, or red pepper flakes. - Serve immediately
Top with extra Parmesan, lemon zest, and cracked black pepper.
