Ingredients

For the Turkey Patties

  • 1 lb (450 g) ground turkey
  • 2 scallions, finely chopped
  • 1-inch piece fresh ginger, grated
  • 3 cloves garlic, grated
  • 2 tsp red curry paste
  • 1 tsp soy sauce
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp chopped cilantro (optional)

For the Quick Pickles

  • 1 Persian cucumber, thinly sliced
  • 1 Fresno chili or red chili, thinly sliced
  • ¼ cup lime juice
  • 1 tsp brown sugar
  • Pinch of salt

For the Slaw

  • 2½ cups shredded cabbage
  • 1 medium carrot, grated
  • 2 tbsp cilantro leaves
  • 1 tbsp chopped fresh basil
  • 1 tsp fish sauce
  • 1 tbsp lime juice

For the Sweet Chili Mayo

  • ⅓ cup mayonnaise
  • 3 tbsp Thai sweet chili sauce
  • 1 tsp chili crisp (optional)

For Serving

  • 4 brioche buns, toasted
  • Lettuce leaves (optional)
  • Extra sweet chili sauce

Instructions

1. Make the Quick Pickles

Combine cucumber, chili, lime juice, brown sugar, and a pinch of salt in a bowl. Let sit for 15–20 minutes while preparing the remaining ingredients.

2. Prepare the Slaw

In a large bowl, mix cabbage, carrot, cilantro, basil, fish sauce, and lime juice. Toss until evenly coated and refrigerate.

3. Make the Patties

In a mixing bowl, combine ground turkey, scallions, ginger, garlic, red curry paste, soy sauce, salt, and pepper. Mix gently and form into 4 equal patties.

4. Cook the Burgers

Heat a skillet or grill over medium-high heat. Cook the patties for 5–6 minutes per side, or until the internal temperature reaches 165°F (74°C).

5. Make the Sweet Chili Mayo

Stir together mayonnaise, sweet chili sauce, and chili crisp until smooth.

6. Assemble

Spread sweet chili mayo on the toasted buns. Add lettuce (if using), turkey patty, slaw, and pickled cucumbers and chilies. Top with the remaining bun.

7. Serve

Serve immediately with fries, sweet potato wedges, or a fresh salad.

Tips

  • Avoid overmixing the turkey to keep the burgers tender.
  • Ground turkey is lean, so a meat thermometer helps prevent overcooking.
  • For extra heat, add sliced jalapeños or extra chili crisp.
  • Use pre-shredded coleslaw mix to save preparation time.
  • Toast the buns lightly to prevent them from becoming soggy.
  • The pickles can be made a day ahead for even better flavor.
  • For a lighter option, serve the burger in lettuce wraps instead of buns.
