Main Ingredients

  • 3–4 lb beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 4 carrots, chopped
  • 4 potatoes, cut into chunks

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce

  • 2 tablespoons cornstarch

Instructions

1. Season the Roast

  • Pat the roast dry with paper towels.
  • Season generously with salt, pepper, thyme, and rosemary.

2. Sear the Beef

  • Heat olive oil in a skillet over medium-high heat.
  • Sear the roast for 3–4 minutes per side until browned.

This step adds deeper flavor.

3. Prepare the Slow Cooker

  • Place onions, carrots, and potatoes in the bottom of the slow cooker.
  • Add garlic.

4. Add the Roast

  • Place the seared roast on top of the vegetables.

5. Add Liquid

  • Pour in beef broth and Worcestershire sauce.
  • Add tomato paste if using.
  • Place bay leaves into the liquid.

6. Slow Cook

Cook:

  • On LOW for 8–10 hours
    or
  • On HIGH for 5–6 hours

The meat should become fork-tender.

7. Make Gravy (Optional)

  • Remove some cooking liquid into a saucepan.
  • Mix cornstarch with water.
  • Stir into the liquid and simmer until thickened.

8. Serve

Slice or shred the roast and serve with vegetables and gravy.
