- 3–4 lb beef chuck roast

Instructions
1. Season the Roast
- Pat the roast dry with paper towels.
- Season generously with salt, pepper, thyme, and rosemary.
2. Sear the Beef
- Heat olive oil in a skillet over medium-high heat.
- Sear the roast for 3–4 minutes per side until browned.
This step adds deeper flavor.
3. Prepare the Slow Cooker
- Place onions, carrots, and potatoes in the bottom of the slow cooker.
- Add garlic.
4. Add the Roast
- Place the seared roast on top of the vegetables.
5. Add Liquid
- Pour in beef broth and Worcestershire sauce.
- Add tomato paste if using.
- Place bay leaves into the liquid.
6. Slow Cook
Cook:
- On LOW for 8–10 hours
or - On HIGH for 5–6 hours
The meat should become fork-tender.
7. Make Gravy (Optional)
- Remove some cooking liquid into a saucepan.
- Mix cornstarch with water.
- Stir into the liquid and simmer until thickened.
8. Serve
Slice or shred the roast and serve with vegetables and gravy.
