Drain excess grease.

Add:

  • Taco seasoning
  • Water
  • Garlic powder
  • Onion powder

In a small saucepan over low heat, combine:

  • Nacho cheese sauce
  • Shredded cheddar cheese
  • Milk
  • Chili powder
  • Garlic powder

Stir until smooth and creamy.

Keep warm until ready to assemble.

Step 3: Warm the Tortillas

Heat tortillas in a dry skillet for about 15–20 seconds per side until soft and flexible.

Keep them covered with a clean towel to prevent drying.

Step 4: Assemble the Stackers

For each Stacker:

  1. Place one tortilla on a flat surface.
  2. Spread a layer of nacho cheese sauce.
  3. Add seasoned taco beef.
  4. Sprinkle shredded Mexican cheese.
  5. Place another tortilla on top.
  6. Repeat with another layer of cheese sauce, beef, and shredded cheese.
  7. Finish with a final tortilla.

Press gently to compact the layers.

Step 5: Grill the Stackers

Heat a nonstick skillet or griddle over medium heat.

Lightly grease the surface if needed.

Place each Stacker on the pan.

Cook for:

2–3 minutes per side

until the tortilla is golden brown and crispy and the cheese is melted.

Step 6: Slice and Serve

Remove from heat.

Let rest for 1–2 minutes.

Cut into wedges and serve warm with your favorite Taco Bell-style sauces.

Tips for the Best Copycat Taco Bell Stackers

  • Warm tortillas before assembling so they fold easily without tearing.
  • Use a combination of nacho cheese and shredded cheese for the best creamy texture.
  • Cook the beef until finely crumbled for a texture closer to fast-food tacos.
  • Grill the finished Stacker for a crispy outside and melted cheese inside.
  • Don’t overfill the layers—too much filling can make flipping difficult.
  • Keep the cheese sauce warm while assembling for easier spreading.
  • Add hot sauce or jalapeños for extra Taco Bell-style heat.

Recipe Notes

  • Ground chicken or turkey can replace beef for a lighter version.
  • Add seasoned rice or black beans for a more filling meal.
  • For a spicy version, mix diced jalapeños or chipotle sauce into the cheese.
  • Use larger tortillas to make family-size Stackers that can be sliced and shared.
  • Prepare taco meat ahead of time for quick weeknight meals.
  • These are great for parties because they can be assembled ahead and grilled just before serving.
