Ingredients

For Homemade Hash Browns

  • 3 large russet potatoes (about 2 pounds)
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika
  • 2 tablespoons cornstarch (optional, for extra crispiness)

Optional Add-Ins

  • ¼ cup shredded cheddar cheese
  • 2 tablespoons chopped green onions
  • 1 tablespoon chopped fresh parsley
  • ¼ teaspoon smoked paprika
  • Pinch of cayenne pepper
  • 2 tablespoons finely diced onion

Equipment

  • Air fryer
  • Box grater or food processor
  • Clean kitchen towel
  • Large mixing bowl
  • Spatula

Instructions

Step 1: Prepare the Potatoes

Peel the potatoes if desired.

Using a box grater or food processor, shred the potatoes into thin strips.

Place the shredded potatoes into a large bowl of cold water.

Let them soak for 5–10 minutes to remove excess starch, which helps create crispier hash browns.

Step 2: Dry the Potatoes

Drain the potatoes thoroughly.

Place the shredded potatoes in a clean kitchen towel and squeeze firmly to remove as much moisture as possible.

This step is important—wet potatoes will steam instead of becoming crispy.

Step 3: Season the Hash Browns

Add the dried potatoes to a bowl.

Mix with:

  • Olive oil or melted butter
  • Salt
  • Pepper
  • Garlic powder
  • Onion powder
  • Paprika
  • Cornstarch (if using)

Stir until the potatoes are evenly coated.

Step 4: Shape the Hash Browns

Take a small handful of the potato mixture and shape it into flat patties about ½ inch thick.

Press firmly so they hold together.

Repeat until all the potato mixture is used.

Step 5: Preheat the Air Fryer

Preheat the air fryer to:

375°F (190°C)

for 3–5 minutes.

Lightly spray the basket with cooking spray.

Step 6: Air Fry the Hash Browns

Place the hash brown patties in the air fryer basket in a single layer.

Do not overcrowd the basket.

Cook for:

12–18 minutes

flipping halfway through.

Continue cooking until the hash browns are golden brown and crispy.

For extra crunch, spray lightly with oil before the final few minutes of cooking.

Step 7: Serve

Serve immediately while hot and crispy.

Season with a little extra salt if desired.

Frozen Hash Browns in the Air Fryer

For store-bought frozen hash brown patties:

Ingredients:

  • Frozen hash brown patties
  • Cooking spray (optional)

Instructions:

  1. Preheat air fryer to 400°F (200°C).
  2. Place frozen hash browns in a single layer.
  3. Air fry for 8–12 minutes.
  4. Flip halfway through cooking.
  5. Cook until crisp and golden.

No thawing is needed.

Tips for the Best Air Fryer Hash Browns

  • Remove as much moisture as possible from the potatoes for maximum crispiness.
  • Russet potatoes work best because they contain more starch and create a crunchier texture.
  • Avoid overcrowding the air fryer basket so hot air can circulate properly.
  • Use cornstarch for an extra-crispy restaurant-style crust.
  • Flip halfway through cooking for even browning.
  • Shape the patties firmly so they do not fall apart.
  • Serve immediately for the best crispy texture.

Recipe Notes

  • Frozen shredded hash browns can be used as a shortcut. Thaw completely and squeeze out excess moisture before seasoning.
  • Sweet potatoes can be substituted for a naturally sweeter variation.
  • Add cheese, jalapeños, or herbs for a loaded breakfast hash brown.
  • These hash browns are perfect for breakfast meal prep because they reheat well in the air fryer.
  • For a McDonald’s-style hash brown shape, form smaller oval patties and freeze for 20–30 minutes before air frying.
