- 1 teaspoon dried parsley
- ½ teaspoon dried rosemary
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon paprika
- 3 cups cooked shredded chicken (rotisserie chicken works well)
- 1 cup frozen peas
- ½ cup frozen corn
Topping
- 1 (32-ounce) bag frozen tater tots
- 1½ cups shredded sharp cheddar cheese
- ¼ cup grated Parmesan cheese
Optional Garnishes
- Fresh chopped parsley
- Chopped chives
- Fresh thyme leaves
- Cracked black pepper
Equipment
- Large skillet or Dutch oven
- 9×13-inch baking dish
- Wooden spoon or silicone spatula
- Whisk
- Measuring cups and spoons
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Lightly grease a 9×13-inch baking dish with nonstick cooking spray or butter.
Step 2: Cook the Vegetables
In a large skillet, heat the butter and olive oil over medium heat.
Add the diced onion, carrots, and celery.
Cook for 6–8 minutes, stirring occasionally, until the vegetables begin to soften.
Add the minced garlic and cook for another 30 seconds until fragrant.
Step 3: Make the Cream Sauce
Sprinkle the flour evenly over the vegetables.
Cook for 1–2 minutes while stirring constantly to eliminate the raw flour taste.
Slowly whisk in the chicken broth until smooth.
Gradually add the milk and heavy cream, whisking continuously to prevent lumps.
Bring the mixture to a gentle simmer and cook for 4–5 minutes until thickened.
Step 4: Season the Filling
Stir in:
- Dried thyme
- Dried parsley
- Dried rosemary
- Onion powder
- Garlic powder
- Salt
- Black pepper
- Paprika
Taste and adjust the seasoning if needed.
Step 5: Add the Chicken and Vegetables
Fold in the shredded chicken, frozen peas, and frozen corn.
Cook for another 2–3 minutes until everything is evenly coated in the creamy sauce.
The filling should be thick but still spoonable. If it becomes too thick, stir in a splash of chicken broth.
Step 6: Assemble the Casserole
Pour the chicken mixture into the prepared baking dish and spread it into an even layer.
Sprinkle half of the shredded cheddar cheese evenly over the filling.
Arrange the frozen tater tots in neat rows, covering the entire surface.
Top with the remaining cheddar cheese and grated Parmesan.
Step 7: Bake
Bake uncovered for 35–40 minutes, or until the tater tots are deeply golden brown and crispy.
If you prefer extra-crispy tots, switch the oven to broil for the final 2–3 minutes, watching carefully to prevent burning.
Step 8: Rest and Garnish
Remove the casserole from the oven and let it rest for 5–10 minutes before serving.
Sprinkle with chopped parsley, chives, or fresh thyme for added color and freshness.
Serve warm.
Serving Suggestions
This comforting casserole pairs wonderfully with:
- Garden salad
- Steamed green beans
- Roasted broccoli
- Garlic bread
- Buttermilk biscuits
- Cranberry sauce
- Coleslaw
- Roasted Brussels sprouts
Storage
Refrigerator: Store leftovers in an airtight container for up to 4 days.
Freezer: Assemble the casserole before baking, wrap tightly, and freeze for up to 3 months. Bake from frozen, adding 20–25 minutes to the cooking time.
Reheating: Reheat individual portions in the microwave, or warm the casserole in a 350°F (175°C) oven until heated through. For the crispiest topping, reheat in the oven rather than the microwave.
Tips for the Best Tater Tot Chicken Pot Pie
- Use rotisserie chicken for a quick and flavorful shortcut.
- Keep the tater tots frozen until you’re ready to assemble the casserole for maximum crispiness.
- Freshly grated cheddar melts more smoothly than pre-shredded cheese.
- Don’t overcook the sauce before baking, as it will continue to thicken in the oven.
- Arrange the tater tots in a single layer to ensure even browning.
- Broil briefly at the end of baking for an extra-crispy potato topping.
- Let the casserole rest before serving so the filling can set and make serving easier.
Recipe Notes
- Swap the chicken for cooked turkey to make this a great post-holiday meal.
- Add sautéed mushrooms, diced potatoes, or chopped spinach for extra vegetables.
- Pepper Jack or Colby Jack cheese can be used in place of cheddar for a different flavor profile.
- For a richer filling, replace part of the milk with additional heavy cream.
- Leftovers reheat beautifully and make an excellent next-day lunch or dinner.
