Instructions
Step 1: Prepare the Chicken
Pat the chicken breasts dry with paper towels. If they are very thick, pound them to an even thickness of about ¾ inch for even cooking.
In a small bowl, combine the garlic powder, onion powder, Italian seasoning, paprika, salt, and black pepper.
Rub both sides of each chicken breast with olive oil, then evenly coat with the seasoning mixture.
Step 2: Sear the Chicken
Heat a large oven-safe skillet over medium-high heat.
Add the remaining olive oil and place the chicken breasts in the hot skillet.
Cook for 4–5 minutes without moving them until a golden-brown crust develops.
Flip the chicken and cook for another 3–4 minutes.

Step 3: Add the Mozzarella
Reduce the heat to low.
Place 2–3 slices of fresh mozzarella over each chicken breast.
Transfer the skillet to a preheated 400°F (200°C) oven and bake for 8–10 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the mozzarella is melted and bubbly.
If you do not have an oven-safe skillet, transfer the chicken to a baking dish before adding the cheese and baking.
Step 4: Prepare the Tomato and Basil
While the chicken is baking, slice the tomatoes and gently pat them dry to remove excess moisture.
Wash and dry the basil leaves, leaving small leaves whole and tearing larger leaves into bite-sized pieces.
Step 5: Assemble the Caprese Chicken
Remove the chicken from the oven and let it rest for 3–5 minutes.
Top each piece with overlapping slices of fresh tomato.
Scatter fresh basil leaves over the tomatoes.
Drizzle with extra virgin olive oil followed by balsamic glaze.
Season lightly with freshly cracked black pepper and a pinch of flaky sea salt if desired.
Step 6: Serve
