Instructions
Step 1: Prepare the Dry Ingredients
In a medium bowl, whisk together:
- Flour
- Cocoa powder
- Baking soda
- Baking powder
- Salt
- Espresso powder
Whisk thoroughly until everything is evenly combined. This ensures the espresso and cocoa distribute evenly throughout the dough.
Step 2: Cream the Butter and Sugars
In a large mixing bowl, beat the softened butter with the granulated sugar and brown sugar on medium speed for about 3–4 minutes until the mixture becomes pale, light, and fluffy.
Proper creaming creates air pockets that produce soft, bakery-style cookies.
Step 3: Add the Wet Ingredients
Beat in the eggs one at a time, mixing well after each addition.
Mix in:
- Vanilla extract
- Coffee extract (if using)
- Brewed espresso
Continue mixing until smooth and creamy.
Step 4: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet mixture.
Mix on low speed just until no dry streaks remain.
Avoid overmixing, as it can make the cookies dense instead of tender.
Step 5: Fold in the Chocolate
Using a spatula, gently fold in:
- Dark chocolate chips
- Chopped dark chocolate
- Crushed chocolate-covered espresso beans
The dough should be thick, rich, and loaded with chocolate.
Step 6: Chill the Dough
Cover the bowl with plastic wrap and refrigerate for at least 45 minutes.
Chilling helps:
- Prevent spreading
- Intensify flavor
- Create thicker cookies
- Improve texture
For even deeper flavor, chill overnight.
Step 7: Prepare for Baking
Preheat the oven to 350°F (175°C).
Line two baking sheets with parchment paper.
Scoop approximately 3 tablespoons of dough for each cookie.
Space them about 2 inches apart.
Step 8: Bake
Bake for 10–12 minutes.
The edges should look set while the centers remain slightly soft.
The cookies will continue cooking as they cool.
Do not overbake if you want chewy centers.
Step 9: Cool
Allow the cookies to cool on the baking sheet for 5 minutes.
Transfer to a wire rack and cool completely before glazing.
Make the Espresso Glaze
Whisk together:
- Powdered sugar
- Espresso
- Milk
- Vanilla
- Pinch of salt
Continue whisking until smooth.
Adjust consistency:
- Add more powdered sugar for a thicker glaze.
- Add a few drops of espresso or milk for a thinner glaze.
Decorate
Once the cookies are completely cool:
- Spoon or drizzle espresso glaze over each cookie.
- Let the glaze set for about 15 minutes.
- Drizzle with melted dark chocolate.
- Sprinkle with crushed espresso beans.
- Add chocolate curls or a light dusting of cocoa powder for a café-inspired finish.
- Finish with a tiny pinch of flaky sea salt if desired to enhance the chocolate and coffee flavors.

Tips for Perfect Espresso Martini Cookies
- Use high-quality espresso powder for the richest coffee flavor.
- Dutch-process cocoa creates a smoother, deeper chocolate taste.
- Chill the dough to achieve thick, chewy bakery-style cookies.
- Slightly underbake for soft centers.
- Add chopped dark chocolate in addition to chips for gooey chocolate pockets.
- Let the glaze set completely before stacking or storing the cookies.
- Garnish just before serving for the freshest appearance and crunch.
Recipe Notes
- For a true espresso martini-inspired flavor without alcohol, use coffee extract and freshly brewed espresso. If baking for adults and desired, you can replace the brewed espresso in the glaze with 1 tablespoon of coffee liqueur mixed with 1 tablespoon espresso; most of the alcohol flavor remains in the glaze, so label accordingly.
- Dark chocolate with 60–70% cocoa complements the coffee notes best.
- The cookies are even more flavorful the day after baking, as the espresso and chocolate notes continue to develop.
- For extra bakery-style appeal, reserve a few chocolate chunks to press into the tops of the cookie dough balls just before baking.
