Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Lightly grease a baking dish with butter or nonstick cooking spray.
Step 2: Prepare the Corn
If using fresh corn, cook the ears in boiling water for 4–5 minutes, then cool slightly and cut the kernels from the cob.
If using frozen corn, thaw and pat dry.
If using canned corn, drain thoroughly to remove excess liquid.
Step 3: Mix the Dip
In a large mixing bowl, combine:
- Cream cheese
- Sour cream
- Mayonnaise
Mix until smooth and creamy.
Stir in:
- Corn
- Cheddar cheese
- Monterey Jack cheese
- Green chilies
- Green onions
- Garlic
- Smoked paprika
- Chili powder
- Ground cumin
- Onion powder
- Cayenne pepper (if using)
- Salt
- Black pepper
Mix until all the ingredients are evenly combined.
Step 4: Bake
Transfer the mixture to the prepared baking dish and spread it into an even layer.
Sprinkle a little extra cheddar cheese over the top if desired.
Bake for 20–25 minutes, or until the dip is hot, bubbling, and the cheese is melted.
For a golden, lightly browned top, broil for 2–3 minutes, watching carefully to prevent burning.
Step 5: Garnish and Serve
Remove the dip from the oven and let it cool for 5 minutes.
Top with chopped cilantro, sliced green onions, diced jalapeños, crumbled bacon, or cotija cheese if desired.
Serve warm with tortilla chips, crackers, toasted bread, or fresh vegetables.

- Drain canned corn and green chilies thoroughly to prevent a watery dip.
- Freshly shredded cheese melts more smoothly than pre-shredded cheese.
- Add cooked crumbled bacon for extra smoky flavor.
- Stir in diced jalapeños or a splash of hot sauce if you prefer a spicier dip.
- Prepare the dip several hours ahead, refrigerate, and bake just before serving.
