Equipment Needed

  • Mixing bowl

Instructions

Step 1: Prepare the Lettuce Cups

Wash the lettuce leaves thoroughly and pat them dry.

Carefully separate the leaves, keeping them whole to create taco-shaped cups.

Place them on a serving platter and refrigerate while preparing the filling to keep them crisp.

Step 2: Cook the Turkey Filling

Heat olive oil in a large skillet over medium heat.

Add the diced onion and cook for 3–4 minutes until softened.

Add the minced garlic and cook for 30 seconds until fragrant.

Add the ground turkey and break it apart with a wooden spoon.

Cook for 7–10 minutes, stirring occasionally, until the turkey is browned and fully cooked.

Drain excess liquid if necessary.

Step 3: Season the Turkey

Add the taco seasoning mixture:

  • Chili powder
  • Cumin
  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Oregano
  • Salt
  • Black pepper
  • Cayenne pepper

Stir well to coat the turkey evenly.

Add:

  • Tomato paste
  • Diced tomatoes with green chilies
  • Chicken broth

Mix everything together.

Simmer for 5–7 minutes, allowing the flavors to combine and the filling to become rich and flavorful.

Stir in fresh lime juice before removing from heat.

Step 4: Assemble the Lettuce Wraps

Place a spoonful of the turkey taco filling into each lettuce cup.

Top with your favorite toppings:

  • Shredded cheese
  • Avocado
  • Sour cream
  • Salsa
  • Cilantro
  • Green onions

Finish with a squeeze of fresh lime juice.

Step 5: Serve

Serve immediately while the lettuce is crisp and the turkey filling is warm.

Arrange toppings separately for a taco-bar-style meal where everyone can customize their own wraps.

Serving Suggestions

Turkey Taco Lettuce Wraps pair well with:

  • Mexican cauliflower rice
  • Avocado salad
  • Roasted zucchini
  • Black bean salad (for non-keto diets)
  • Fresh salsa and guacamole
  • Cilantro lime cauliflower rice
  • Tortilla chips (for a non-low-carb option)

Storage

  • Store the turkey filling separately from the lettuce leaves.
  • Refrigerate cooked turkey filling in an airtight container for up to 4 days.
  • Freeze the turkey mixture for up to 3 months.

Reheating

Stovetop:
Warm the turkey filling over medium heat for 5–7 minutes, adding a splash of broth if needed.

Microwave:
Heat in 30-second intervals until warmed through.

Avoid reheating lettuce wraps, as the leaves will become soft.

Tips for Success

  • Choose sturdy lettuce varieties like romaine or butter lettuce to hold the filling well.
  • Cook the turkey until it develops some browned edges for deeper flavor.
  • Add a little chicken broth while simmering to keep the filling juicy.
  • Prepare toppings ahead of time for a quick meal assembly.
  • For extra flavor, mix a spoonful of taco seasoning into sour cream to create a creamy taco sauce.
  • Make the turkey filling in advance for easy meal prep throughout the week.
