- 1 tablespoon cornstarch mixed with 2 tablespoons cold water (optional, for a thicker gravy)
For the Cheese Topping
- 1 cup shredded Gruyère cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese

Instructions
Step 1: Prepare the Roast
Preheat the oven to 325°F (163°C).
Pat the chuck roast dry with paper towels.
Season all sides evenly with:
- Kosher salt
- Black pepper
- Garlic powder
- Onion powder
Allow the roast to rest at room temperature for 20 minutes before cooking.
Step 2: Sear the Beef
Heat the olive oil in a Dutch oven over medium-high heat.
Add the butter.
Once hot, carefully place the roast in the pot.
Sear for 4–5 minutes per side until a deep golden-brown crust develops on all sides.
Transfer the roast to a plate.
Step 3: Caramelize the Onions
Reduce the heat to medium.
Add the sliced onions to the same pot.
Cook for 25–30 minutes, stirring frequently, until the onions become deeply golden, soft, and caramelized.
Add the garlic and cook for 1 minute until fragrant.
Stir in the tomato paste and cook for 2 minutes to deepen its flavor.
Step 4: Build the Braising Liquid
Pour in the red wine (if using), scraping up all the browned bits from the bottom of the pot with a wooden spoon.
Let the wine simmer for 3–4 minutes to reduce slightly.
Stir in:
- Beef broth
- Worcestershire sauce
- Dijon mustard
- Balsamic vinegar
- Thyme
- Rosemary
- Bay leaves
Bring the mixture to a gentle simmer.
Step 5: Braise the Roast
Return the seared roast and any accumulated juices to the Dutch oven, nestling it into the onion mixture.
Cover with the lid and transfer to the preheated oven.
Cook for 3 to 3½ hours, turning the roast once halfway through cooking.
The roast is done when it is fork-tender and easily pulls apart.
Step 6: Make the Gravy
Transfer the roast to a serving platter and loosely cover with foil.
Discard the bay leaves.
If you prefer a thicker gravy, bring the onion mixture to a simmer on the stovetop and whisk in the cornstarch slurry.
Cook for 2–3 minutes, stirring constantly, until the gravy thickens.
Taste and adjust seasoning with additional salt and pepper if needed.
Step 7: Add the Cheese
Preheat the oven broiler.
Sprinkle the Gruyère, mozzarella, and Parmesan cheeses evenly over the top of the roast.
Place the roast under the broiler for 2–4 minutes, or until the cheese is melted, bubbly, and lightly golden.
Watch carefully to prevent burning.
Step 8: Serve
Slice or shred the pot roast into large pieces.
Spoon the rich French onion gravy generously over the meat.
Garnish with fresh parsley, thyme leaves, and cracked black pepper.
