Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 2 large eggs
  • ¾ cup finely grated Parmesan cheese
  • ½ cup finely ground almond flour
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons olive oil
  • 1 tablespoon butter

For the Topping

  • 1 cup sugar-free marinara sauce
  • 1½ cups shredded whole-milk mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped fresh basil or parsley

Optional Garnishes

  • Fresh basil leaves
  • Red pepper flakes
  • Extra grated Parmesan cheese

Equipment Needed

  • Large skillet
  • Baking dish
  • Shallow bowls
  • Whisk
  • Tongs
  • Meat mallet (optional)
  • Instant-read thermometer

Instructions

Step 1: Prepare the Chicken

Preheat the oven to 400°F (200°C).

If the chicken breasts are thick, place them between two sheets of plastic wrap and gently pound them to an even thickness of about ½ inch. This helps them cook evenly.

Pat the chicken dry with paper towels.

Season both sides with:

  • Salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Italian seasoning
  • Smoked paprika

Allow the chicken to rest for 10 minutes while preparing the coating.

Step 2: Prepare the Coating

In one shallow bowl, whisk the eggs until smooth.

In a second shallow bowl, combine:

  • Parmesan cheese
  • Almond flour
  • Chopped parsley
  • A pinch of Italian seasoning

Mix well.

Dip each chicken breast into the beaten eggs, allowing any excess to drip off.

Press both sides firmly into the Parmesan-almond flour mixture until evenly coated.

Set the coated chicken aside for a few minutes so the coating adheres well.

Step 3: Pan-Sear the Chicken

Heat the olive oil and butter in a large skillet over medium heat.

Once hot, carefully add the coated chicken breasts without overcrowding the pan.

Cook for 4–5 minutes per side, or until the coating is crisp and golden brown.

Transfer the chicken to a lightly greased baking dish.

Step 4: Add the Toppings

Spoon about ¼ cup of sugar-free marinara sauce over each chicken breast, spreading it evenly without covering the edges completely to help maintain some crispness.

Sprinkle the mozzarella cheese evenly over the sauce.

Top with the grated Parmesan cheese and a light sprinkle of Italian seasoning.

Step 5: Bake

Place the baking dish in the preheated oven.

Bake for 15–18 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbling.

For a beautifully browned cheese topping, broil for 1–2 minutes, watching carefully to prevent burning.

Step 6: Rest and Serve

Remove the chicken from the oven and let it rest for 5 minutes before serving. This helps the juices redistribute, keeping the chicken tender and moist.

Garnish with fresh basil, chopped parsley, extra Parmesan cheese, and a pinch of red pepper flakes if desired.

Serve immediately while hot.

Tips for Success

  • Pound the chicken to an even thickness for consistent cooking.
  • Use freshly grated Parmesan cheese for the best flavor and crisp texture.
  • Pat the chicken dry before seasoning so the coating adheres better.
  • Avoid adding too much marinara sauce, as excess moisture can soften the crispy crust.
  • Let the chicken rest before serving to keep it juicy.
  • Choose a sugar-free marinara sauce to keep the recipe keto-friendly.
  • For extra flavor, add a pinch of crushed red pepper flakes or a sprinkle of fresh oregano before serving.
