Ingredients

For the Chicken

  • 2 lbs (900 g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Jalapeño Popper Sauce

  • 6 slices bacon, chopped
  • 3 fresh jalapeños, seeded and sliced (leave seeds for more heat)
  • 3 cloves garlic, minced
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (240 ml) heavy cream
  • 1 cup (120 g) shredded cheddar cheese
  • ½ cup (50 g) grated Parmesan cheese
  • ½ cup (120 g) sour cream
  • 2 tablespoons chopped green onions
  • 1 teaspoon ranch seasoning (optional)
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

Step 1: Cook the Bacon

  1. Heat a large skillet over medium heat.
  2. Add chopped bacon and cook until crispy.
  3. Remove bacon from the skillet and set aside, leaving about 1–2 tablespoons of bacon grease in the pan.

Step 2: Cook the Chicken

  1. Add olive oil to the skillet if needed.
  2. Add chicken pieces and season with:
    • Smoked paprika
    • Garlic powder
    • Onion powder
    • Chili powder
    • Salt
    • Black pepper
  3. Cook for 6–8 minutes, stirring occasionally, until the chicken is golden and nearly cooked through.
  4. Remove chicken and set aside.

Step 3: Cook the Jalapeños and Garlic

  1. Add sliced jalapeños to the same skillet.
  2. Sauté for 2–3 minutes until slightly softened.
  3. Add minced garlic and cook for 30 seconds until fragrant.

Step 4: Make the Creamy Cheese Sauce

  1. Reduce heat to low.
  2. Add cream cheese and stir until melted.
  3. Slowly pour in heavy cream while stirring.
  4. Add cheddar cheese and Parmesan cheese.
  5. Stir until the sauce becomes smooth and creamy.
  6. Mix in sour cream, ranch seasoning (if using), and smoked paprika.

Step 5: Combine Everything

  1. Return the cooked chicken to the skillet.
  2. Stir until coated in the creamy jalapeño cheese sauce.
  3. Add half of the crispy bacon and mix well.
  4. Simmer for 5–7 minutes until the chicken is fully cooked.

Step 6: Finish and Serve

  1. Top with remaining bacon, extra cheese, jalapeño slices, and green onions.
  2. Serve hot directly from the skillet.

Flavor Variations

Extra Spicy Jalapeño Popper Chicken

Add diced serrano peppers, cayenne pepper, or hot sauce.

Buffalo Jalapeño Chicken

Add 2–3 tablespoons buffalo sauce and replace some cheddar with blue cheese.
