Instructions
Step 1: Prepare the Pan
- Preheat the oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
Step 2: Make the Shortbread Crust
- In a large bowl, combine the almond flour, coconut flour, powdered sweetener, baking powder, and salt.
- Stir in the melted butter and vanilla extract until a soft dough forms.
- Press the dough evenly into the prepared pan.
- Prick the surface lightly with a fork to help it bake evenly.
Step 3: Bake the Crust
- Bake for 18–20 minutes, or until the edges are lightly golden.
- Remove from the oven and allow the crust to cool completely.
Step 4: Toast the Coconut
- Spread the shredded coconut on a baking sheet.
- Bake at 325°F (160°C) for 6–8 minutes, stirring halfway through, until lightly golden.
- Let the coconut cool slightly.
Step 5: Prepare the Caramel
- In a medium saucepan over medium-low heat, melt the butter.
- Add the heavy cream, powdered sweetener, sugar-free caramel syrup (if using), vanilla extract, and sea salt.
- Simmer gently for 5–7 minutes, whisking frequently, until the mixture thickens into a smooth caramel.
- Remove from the heat and fold in the toasted coconut until evenly coated.
Step 6: Assemble the Bars
- Spread the coconut caramel mixture evenly over the cooled shortbread crust.
- Press gently with a spatula to create an even layer.
Step 7: Make the Chocolate Drizzle
- Melt the sugar-free chocolate chips and coconut oil together in the microwave in 20-second intervals, stirring between each interval, or melt them gently over a double boiler.
- Transfer the melted chocolate to a piping bag or a small zip-top bag with the corner snipped off.
- Drizzle the chocolate over the coconut layer in a decorative pattern.
Step 8: Chill
- Refrigerate the bars for 1 hour, or until the caramel and chocolate are fully set.
- Lift the bars from the pan using the parchment paper and cut into 16 squares with a sharp knife.

Chef’s Tips
- Toast the coconut carefully, as it can brown quickly.
- Allulose is recommended for the smoothest caramel texture because it caramelizes more like sugar.
- Chill the bars thoroughly before slicing for clean, neat edges.
- Wipe the knife clean between cuts for professional-looking bars.
- Store the bars in the refrigerator to keep the caramel layer firm.
