  • 2 large ripe Hass avocados
  • 2 tablespoons fresh lime juice
  • ¼ cup finely diced red onion
  • 1 small Roma tomato, seeded and finely diced
  • 1 small jalapeño, seeded and minced
  • 2 tablespoons chopped fresh cilantro
  • 1 small garlic clove, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

For the Bacon Wrap

  • 12 slices thin-cut bacon
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • Toothpicks (optional)

Optional Dipping Sauces

  • Ranch dressing
  • Chipotle aioli
  • Salsa
  • Sour cream
  • Jalapeño ranch

Instructions

Step 1: Make the Guacamole

In a medium bowl, mash the avocados until mostly smooth with a few small chunks remaining. Stir in the lime juice, onion, tomato, jalapeño, cilantro, garlic, salt, and pepper until evenly combined.

Step 2: Chill

Cover and refrigerate the guacamole for 20–30 minutes to firm it up, making it easier to shape.

Step 3: Shape the Bombs

Using a small cookie scoop or tablespoon, scoop portions of the guacamole and shape them into balls with lightly damp hands. Place them on a parchment-lined tray and freeze for 20–30 minutes until firm.

Step 4: Wrap with Bacon

Wrap each chilled guacamole ball with one slice of bacon, slightly overlapping the ends. Secure with a toothpick if needed. Sprinkle with chili powder, smoked paprika, and garlic powder.

Step 5: Bake

Preheat the oven to 400°F (200°C).

Place the bacon-wrapped bombs on a wire rack set over a baking sheet. Bake for 20–25 minutes, turning halfway through, until the bacon is browned and crispy.

Air Fryer Option: Air fry at 375°F (190°C) for 12–15 minutes, turning halfway through.

Step 6: Serve

Let the Bacon Guac Bombs cool for 2–3 minutes before serving. Pair with your favorite dipping sauces and garnish with chopped cilantro and lime wedges if desired.

Recipe Tips

  • Freeze the guacamole balls before wrapping to help them keep their shape.
  • Use thin-cut bacon so it crisps before the avocado becomes too soft.
  • Avoid overfilling the bombs, as large portions can be difficult to wrap.
  • For extra smoky flavor, sprinkle the bacon with smoked paprika before baking.
  • Serve immediately for the best texture and flavor.

Storage

  • Refrigerator: Store leftovers in an airtight container for up to 2 days.
  • Reheat: Warm in a 375°F (190°C) oven or air fryer for 5–7 minutes until the bacon is crisp.
  • Freezing: Not recommended after cooking, as the avocado texture may become watery.

Frequently Asked Questions

Can I make these ahead of time?

Yes. Shape and freeze the guacamole balls up to one day in advance. Wrap with bacon just before baking for the best results.

Can I use store-bought guacamole?

Yes, but choose a thick, high-quality guacamole. Chilling or freezing it first will make shaping much easier.

Can I make them spicy?

Absolutely. Add extra jalapeño, diced serrano pepper, cayenne pepper, or your favorite hot sauce to the guacamole.

Are Bacon Guac Bombs keto-friendly?

Yes. They’re naturally low in carbohydrates and fit well into a keto or low-carb lifestyle.

Why are my guacamole balls falling apart?

If the mixture is too soft, chill or freeze it longer before wrapping with bacon to help it hold its shape.
