Instructions
Step 1: Make the Hollandaise Sauce

Step 2: Sauté the Spinach
Heat the butter in a large skillet over medium heat.

Lift each egg out with a slotted spoon and place it on a paper towel to drain.

Top each toasted English muffin half with a generous spoonful of sautéed spinach.
Place a poached egg on top of the spinach.
