For the Filling

  • 8 ounces (225g) feta cheese, crumbled
  • 4 ounces (115g) cream cheese, softened
  • ¼ cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 green onion, finely sliced
  • 1 clove garlic, minced
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • 1 teaspoon lemon zest

For the Pockets

  • 1 package puff pastry (2 sheets), thawed
  • 1 large egg
  • 1 tablespoon water
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon olive oil or melted butter (optional, for extra browning)

Optional Dipping Sauces

  • Tzatziki
  • Marinara sauce
  • Garlic yogurt sauce
  • Hot honey
  • Hummus

Instructions

Step 1: Prepare the Filling

In a medium mixing bowl, combine the feta cheese, cream cheese, mozzarella, parsley, dill, green onion, garlic, oregano, black pepper, and lemon zest.

Mix until the filling is well combined and creamy.

Step 2: Prepare the Puff Pastry

Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Lightly flour your work surface and unfold the puff pastry sheets.

Cut each sheet into four equal squares to make a total of 8 squares.

Step 3: Fill the Pastries

Place about 2 tablespoons of the feta filling in the center of each pastry square.

Brush the edges lightly with water.

Fold each square diagonally into a triangle or fold into a rectangle, then press the edges firmly with a fork to seal.

Arrange the pockets on the prepared baking sheet, leaving space between each one.

Step 4: Add the Egg Wash

Whisk together the egg and water to make an egg wash.

Brush the tops of each pastry pocket evenly with the egg wash.

Sprinkle with sesame seeds if desired.

For extra richness and color, lightly brush the tops with a little olive oil or melted butter.

Step 5: Bake

Bake for 18–22 minutes, or until the pastries are puffed, deeply golden, and crisp.

Allow them to cool for 5 minutes before serving, as the filling will be very hot.

Step 6: Serve

Serve the Crispy Feta Pockets warm with your favorite dipping sauce such as tzatziki, marinara, garlic yogurt sauce, or hot honey.

Garnish with fresh herbs or an extra sprinkle of sesame seeds if desired.

Tips for the Best Crispy Feta Pockets

  • Keep the puff pastry cold until you’re ready to use it for the flakiest texture.
  • Don’t overfill the pockets, or the filling may leak during baking.
  • Seal the edges tightly with a fork to prevent the cheese from escaping.
  • Use freshly crumbled feta for the best flavor.
  • Let the pastries cool slightly before serving to allow the filling to set.
  • Brush with egg wash for a beautifully golden finish.
