Ingredients
For the Bean Mixture
- 6 slices bacon, chopped
- 1 pound (450g) lean ground beef
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 (15-ounce) can pinto beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can baked beans (do not drain)
For the Sauce
- 1 cup barbecue sauce
- ½ cup ketchup
- ¼ cup brown sugar
- 2 tablespoons yellow mustard
- 1 tablespoon Worcestershire sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ½ teaspoon black pepper
- ½ teaspoon salt (adjust to taste)
Optional Add-Ins
- 1 diced jalapeño
- ½ teaspoon cayenne pepper
- 1 diced green bell pepper
- 1 teaspoon hot sauce
- 1 tablespoon maple syrup
- Fresh chopped parsley for garnish
Instructions
Step 1: Cook the Bacon
Preheat the oven to 350°F (175°C).
In a large oven-safe Dutch oven or deep skillet, cook the chopped bacon over medium heat until crispy, about 6–8 minutes.
Using a slotted spoon, transfer the bacon to a paper towel-lined plate, leaving about 2 tablespoons of bacon fat in the pot.
Step 2: Brown the Beef
Add the ground beef to the same pot and cook until browned, breaking it apart with a spoon as it cooks.
Stir in the diced onion and cook for about 5 minutes, until softened.
Add the minced garlic and cook for another 30 seconds until fragrant.
Drain any excess grease if necessary.
Step 3: Prepare the Sauce
In a medium bowl, whisk together the barbecue sauce, ketchup, brown sugar, mustard, Worcestershire sauce, apple cider vinegar, smoked paprika, chili powder, cumin, black pepper, and salt until smooth.
Step 4: Combine Everything
Add the pinto beans, kidney beans, black beans, baked beans, and cooked bacon to the pot with the beef mixture.
Pour the prepared sauce over the beans and stir until everything is evenly coated.
If using jalapeños or bell peppers, stir them in now.
Step 5: Bake
Cover the pot with a lid or aluminum foil and bake for 45 minutes.
Remove the lid and continue baking for 15–20 minutes, allowing the sauce to thicken and caramelize slightly around the edges.
Step 6: Serve
Remove the Cowboy Beans from the oven and let them rest for about 5 minutes before serving.
Garnish with fresh parsley if desired and serve warm.
