Ingredients

For the Sausage

  • 1½ pounds ground chicken
  • 2 tablespoons pure maple syrup

Instructions

Step 1: Mix the Ingredients

In a large mixing bowl, combine the ground chicken, maple syrup, olive oil, sage, thyme, garlic powder, onion powder, smoked paprika, salt, black pepper, nutmeg, fennel seeds, crushed red pepper flakes, and parsley. Mix gently until everything is evenly combined without overworking the meat.


Step 2: Chill the Mixture

Cover the bowl and refrigerate for 20 minutes. Chilling helps the mixture firm up and allows the flavors to develop.


Step 3: Shape the Patties

Divide the mixture into 8 equal portions and shape each into a patty about ½ inch thick. Place the patties on a parchment-lined plate while you heat the skillet.


Step 4: Cook the Sausage

Heat the butter or olive oil in a large skillet over medium heat. Add the patties in a single layer, leaving space between them.

Cook for 5–6 minutes per side, turning once, until the patties are golden brown and the internal temperature reaches 165°F (74°C).


Step 5: Rest the Patties

Transfer the cooked patties to a plate and let them rest for 2–3 minutes before serving. This helps keep the sausage juicy and flavorful.


Step 6: Serve

Serve the Maple Chicken Breakfast Sausage warm with scrambled eggs, pancakes, waffles, French toast, biscuits, breakfast potatoes, or fresh fruit. Drizzle with a little extra maple syrup for an extra touch of sweetness if desired.

Storage
