Ingredients
For the Mojitos
- 2 cups ripe cantaloupe or honeydew melon, cubed
- 1 medium cucumber, peeled and sliced
- ½ cup fresh mint leaves, plus extra for garnish
- ½ cup freshly squeezed lime juice
- ¼ cup simple syrup (adjust to taste)
- 1 cup white rum
- 2 cups chilled club soda or sparkling water
- 4 cups crushed ice
For Garnish
- Cucumber ribbons or slices
- Melon balls
- Lime wheels
- Fresh mint sprigs
- Extra crushed ice
Instructions
Step 1: Prepare the Fruit
Wash the cucumber thoroughly and peel if desired. Slice it into thin rounds.
Cut the melon in half, remove the seeds, and cut the flesh into cubes. If you prefer a decorative presentation, use a melon baller to create a few melon balls for garnish.
Step 2: Muddle the Mint
Divide the fresh mint leaves evenly among four sturdy serving glasses.
Add a tablespoon of simple syrup to each glass.
Using a muddler or the back of a wooden spoon, gently press the mint leaves to release their natural oils without tearing them into tiny pieces.
Step 3: Blend the Melon
Place the melon cubes, half of the cucumber slices, lime juice, and the remaining simple syrup in a blender.
Blend until completely smooth.
For a smoother cocktail, strain the mixture through a fine-mesh sieve into a pitcher to remove any pulp.
Step 4: Combine the Cocktail
Pour the melon mixture into the pitcher.
Add the white rum and stir until well combined.
Taste and adjust with additional lime juice for more tartness or simple syrup for extra sweetness.
Step 5: Assemble the Mojitos
Fill each prepared glass with crushed ice.
Divide the remaining cucumber slices among the glasses.
Pour the melon-rum mixture over the ice, filling each glass about three-quarters full.
Top each drink with chilled club soda or sparkling water and gently stir.
Step 6: Garnish and Serve
Garnish each mojito with cucumber ribbons, melon balls, fresh mint sprigs, and a lime wheel.
Serve immediately with a straw or cocktail stirrer while the drink is cold and bubbly.
