Ingredients
For the Cake
- 4 medium apples (Honeycrisp, Granny Smith, Fuji, or Gala), peeled, cored, and cut into 1-inch cubes
- 2 tablespoons granulated sugar (for the apples)
- 2 teaspoons fresh lemon juice
- 1½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 tablespoons dark rum (optional)
- ⅓ cup whole milk
Optional Topping
- 1 tablespoon melted butter
- 1 tablespoon granulated sugar
- Powdered sugar for dusting
Equipment
- 9-inch round cake pan or springform pan
- Mixing bowls
- Electric mixer
- Rubber spatula
- Whisk
- Measuring cups and spoons
- Cooling rack
Instructions
Step 1: Prepare the Oven
Preheat the oven to 350°F (175°C).
Grease a 9-inch round cake pan and line the bottom with parchment paper.
Step 2: Prepare the Apples
Peel, core, and cut the apples into bite-sized cubes.
Place them in a bowl and toss with:
- 2 tablespoons sugar
- Lemon juice
Set aside while preparing the batter.
Step 3: Mix the Dry Ingredients
In a medium bowl, whisk together:
- Flour
- Baking powder
- Salt
Set aside.
Step 4: Cream the Butter and Sugar
In a large bowl, beat the softened butter and sugar until pale and fluffy, about 3–4 minutes.
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla extract and rum (if using).
Step 5: Combine the Batter
Gradually add the dry ingredients to the butter mixture, alternating with the milk.
Mix just until combined.
The batter will be fairly thick.
Step 6: Fold in the Apples
Gently fold the apple cubes into the batter using a spatula.
The batter should be generously filled with apples, ensuring every slice has plenty of fruit.
Spread the mixture evenly into the prepared cake pan.
Step 7: Add the Topping
Brush the top lightly with melted butter.
Sprinkle with granulated sugar to create a lightly crisp, golden crust during baking.
Step 8: Bake
Bake for 50–60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
If the cake browns too quickly, loosely cover it with aluminum foil during the last 15 minutes of baking.
Step 9: Cool
Allow the cake to cool in the pan for 15 minutes.
Carefully remove it from the pan and transfer it to a wire rack to cool completely.
Step 10: Serve
Dust generously with powdered sugar before serving.
Slice and enjoy on its own or with whipped cream, vanilla ice cream, or a drizzle of caramel sauce.
