  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 1 tbsp olive oil

Toppings

  • Avocado or guacamole
  • Cherry tomatoes or pico de gallo
  • Corn
  • Shredded lettuce
  • Fresh cilantro
  • Lime wedges
  • Sour cream or Greek yogurt
  • Shredded cheese (optional)

Instructions

1. Marinate the Steak

In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, paprika, oregano, salt, and pepper.

Add steak and toss to coat.

Let marinate for at least 20 minutes (or up to overnight).

2. Cook the Rice & Beans

Prepare rice according to package instructions.

Warm black beans in a small saucepan or microwave.

3. Sauté the Vegetables

Heat olive oil in a large skillet over medium-high heat.

Add sliced peppers and onions.

Cook 6–8 minutes until tender with slight charred edges.

Remove and set aside.

4. Cook the Steak

Using the same skillet, cook steak over high heat for 2–4 minutes, stirring occasionally, until browned and cooked to desired doneness.

Avoid overcrowding the pan for better searing.

5. Assemble the Bowls

Add rice as the base.

Top with black beans, fajita vegetables, and steak.

Finish with your favorite toppings like avocado, pico de gallo, cilantro, and lime juice.

Serve warm.

Add More Flavor

Mix chopped cilantro and lime juice into the rice before serving.

Lower Carb Version
