Instructions

Step 1: Prepare the Oven

Preheat oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Step 2: Mix Dry Ingredients

In a large mixing bowl combine:

  • Flour
  • Sugar
  • Baking powder
  • Baking soda
  • Salt

Whisk thoroughly.

Step 3: Cut in the Butter

Add the cold cubed butter.

Using a pastry cutter, two forks, or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs with pea-sized butter pieces remaining.

Those small butter pieces create flaky layers during baking.

Step 4: Add Flavor Mix-Ins

Gently stir in your chosen mix-ins.

Distribute evenly throughout the flour mixture.

Step 5: Mix Wet Ingredients

In a separate bowl whisk together:

  • Heavy cream
  • Egg
  • Vanilla extract

Pour into the dry ingredients.

Mix just until a shaggy dough forms.

Avoid overmixing.

Step 6: Shape the Dough

Turn the dough onto a lightly floured surface.

Gently knead a few times until it comes together.

Pat into an 8-inch round disk about 1 inch thick.

Cut into 8 wedges.

Transfer to the prepared baking sheet.

Step 7: Chill

Place the tray in the refrigerator for 15 minutes.

This helps the butter stay cold and creates flakier scones.

Step 8: Bake

Brush the tops with heavy cream.

Sprinkle with coarse sugar if desired.

Bake for 18–22 minutes, or until the tops are golden brown.

Remove from the oven and cool on the baking sheet for 5 minutes before transferring to a wire rack.
