Ingredients

Instructions

Step 1: Prepare the Zucchini

Wash and dry the zucchini thoroughly.

Trim off both ends and cut each zucchini into fry-shaped sticks about 3–4 inches long and ½ inch thick.

Pat the zucchini dry with paper towels to remove excess moisture.


Step 2: Prepare the Coating

In a shallow bowl, combine:

  • Garlic powder
  • Italian seasoning
  • Paprika
  • Salt
  • Black pepper

Mix well.

In a second bowl, whisk together:

  • Eggs
  • Water

until smooth.

Dip each zucchini stick into the egg mixture.

Allow excess egg to drip off.

Roll in the breadcrumb mixture, pressing gently so the coating sticks well.

Arrange coated zucchini fries on a parchment-lined baking sheet.

For extra crispiness, place them on a wire rack set over the baking sheet.


Step 4: Bake

Preheat oven to 425°F (220°C).

Lightly spray the zucchini fries with cooking spray.

Bake for 18–22 minutes, turning halfway through cooking.

Bake until golden brown and crisp.

For extra crunch, broil for 1–2 minutes at the end of cooking.

While the fries bake, combine:
