Ingredients

Main

  • 1 lb boneless skinless chicken breast, cut into bite-size pieces
  • 1 package (16 oz) potato gnocchi
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • ½ tsp red pepper flakes (optional)

Creamy Caprese Finish

  • ½ cup heavy cream
  • 1 cup fresh mozzarella pearls or diced mozzarella
  • ¼ cup grated parmesan cheese
  • ½ cup fresh basil leaves, torn

Optional Garnishes

  • Balsamic glaze
  • Extra basil
  • Fresh cracked pepper

Instructions

1. Cook the Chicken

Heat olive oil in a large skillet over medium-high heat.

Add chicken pieces, season with salt, pepper, and Italian seasoning, then cook for 5–7 minutes until golden and cooked through.

Remove chicken from skillet and set aside.


2. Sauté Garlic & Tomatoes

In the same skillet, add garlic and cook for about 30 seconds until fragrant.

Add cherry tomatoes and cook 3–4 minutes until they begin to soften and burst.


3. Cook the Gnocchi

Add gnocchi directly into the skillet with ¼ cup water.

Cover and cook for about 4–5 minutes, stirring occasionally, until gnocchi becomes tender.


4. Make it Creamy

Lower heat to medium-low.

Stir in heavy cream and parmesan cheese.

Return chicken to the skillet and mix well.


5. Add the Caprese Finish

Add mozzarella and fresh basil.

Cook just until mozzarella starts melting.

Drizzle with balsamic glaze if desired.

Serve hot.


Tips

For Crispy Gnocchi

Before adding liquids, pan-fry the gnocchi in a little oil for 2–3 minutes to create a crispy outside.

Best Mozzarella

Fresh mozzarella pearls melt beautifully and give the dish a classic Caprese flavor.

Add More Veggies

Spinach, zucchini, or mushrooms work very well in this skillet.

Make it Lighter

Swap heavy cream for half-and-half or a splash of milk.

Extra Flavor

A spoonful of pesto stirred in at the end adds amazing herb flavor.

Storage

Store leftovers in an airtight container for up to 3 days. Reheat gently with a splash of milk or cream.
