Creamy Lemon-Garlic Butter Beans
Ingredients
- 2 cans butter beans (drained and rinsed)
- 2 tablespoons butter
- 4 garlic cloves, minced
- 1 small shallot or ½ onion, finely diced
- 1 cup vegetable broth
- ¾ cup heavy cream (or coconut cream for dairy-free)
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- ¼ cup grated Parmesan (optional)
- 2 cups spinach or kale
- Fresh parsley or basil for garnish
Instructions
- Sauté the aromatics
Melt the butter in a large skillet over medium heat. Add the shallot and cook for 2–3 minutes until softened. Stir in the garlic and cook for another 30 seconds until fragrant. - Add the beans
Stir in the butter beans and cook for 1–2 minutes so they absorb the flavors. - Create the sauce
Pour in the vegetable broth and simmer for 3 minutes. Reduce the heat and stir in the cream, lemon zest, lemon juice, salt, pepper, and red pepper flakes. - Make it creamy
Let the mixture simmer gently for 5–7 minutes until slightly thickened. For extra creaminess, lightly mash a few beans with the back of a spoon. - Add greens and cheese
Stir in spinach or kale until wilted. Add Parmesan if using and mix until melted. - Serve
Garnish with parsley or basil and serve warm with toasted sourdough, rice, pasta, or roasted vegetables.
