Creamy Lemon-Garlic Butter Beans

Ingredients

  • 2 cans butter beans (drained and rinsed)
  • 2 tablespoons butter
  • 4 garlic cloves, minced
  • 1 small shallot or ½ onion, finely diced
  • 1 cup vegetable broth
  • ¾ cup heavy cream (or coconut cream for dairy-free)
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup grated Parmesan (optional)
  • 2 cups spinach or kale
  • Fresh parsley or basil for garnish

Instructions

  1. Sauté the aromatics
    Melt the butter in a large skillet over medium heat. Add the shallot and cook for 2–3 minutes until softened. Stir in the garlic and cook for another 30 seconds until fragrant.
  2. Add the beans
    Stir in the butter beans and cook for 1–2 minutes so they absorb the flavors.
  3. Create the sauce
    Pour in the vegetable broth and simmer for 3 minutes. Reduce the heat and stir in the cream, lemon zest, lemon juice, salt, pepper, and red pepper flakes.
  4. Make it creamy
    Let the mixture simmer gently for 5–7 minutes until slightly thickened. For extra creaminess, lightly mash a few beans with the back of a spoon.
  5. Add greens and cheese
    Stir in spinach or kale until wilted. Add Parmesan if using and mix until melted.
  6. Serve
    Garnish with parsley or basil and serve warm with toasted sourdough, rice, pasta, or roasted vegetables.
