  • 1 egg white (for brushing)

  • 6 cups fresh strawberries, washed and hulled
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • ¾ cup water
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

Step 1: Bake the Pie Crust

Preheat your oven to 400°F (200°C).

Roll out the pie crust and fit it into a 9-inch pie plate. Crimp the edges as desired.

Prick the bottom several times with a fork.

Line the crust with parchment paper and fill with pie weights or dried beans.

Bake for 15 minutes.

Remove the parchment and weights.

Brush the crust lightly with egg white and return to the oven for another 8–10 minutes until golden brown.

Allow the crust to cool completely before filling.


Step 2: Prepare the Strawberries

Wash and dry the strawberries thoroughly.

Remove the stems and hulls.

Select about 1½ cups of the strawberries and mash them with a fork or potato masher.

Leave the remaining strawberries whole or cut large berries in half.

Step 3: Make the Homemade Strawberry Glaze

In a medium saucepan combine:

  • Mashed strawberries
  • Sugar
  • Cornstarch
  • Water
  • Lemon juice
  • Salt

Whisk until smooth.

Place over medium heat.

Cook while stirring constantly.

As the mixture heats, it will begin to thicken and become translucent.

Continue cooking for approximately 7–10 minutes until the glaze reaches a thick, glossy consistency similar to jam.

Remove from heat.

Stir in vanilla extract.

Allow the glaze to cool for 15 minutes.


Step 4: Fill the Pie

Arrange the whole strawberries inside the cooled pie crust.

Pack them closely together for a beautiful presentation and fuller pie.

Slowly pour the cooled glaze over the strawberries.

Use a spoon to gently work the glaze between the berries so every strawberry is coated.

The glaze should settle naturally around the fruit.


 

 

 

Step 5: Chill Until Set

Transfer the pie to the refrigerator.

Chill for at least 4–6 hours.

For best results, refrigerate overnight.

This allows the filling to firm up and makes slicing much easier.


Step 6: Prepare Whipped Cream (Optional)

For homemade whipped cream:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Method

Beat all ingredients together until soft peaks form.

Keep refrigerated until ready to serve.


Step 7: Slice and Serve

Remove the pie from the refrigerator.

Slice using a sharp knife.

Top each slice with:

  • Homemade whipped cream
  • Fresh strawberry slices
  • Mint leaves

Serve chilled.
